I've tried it--it's really good! The zucchini adds a lot of moistness, and almost seems like coconut in the cake.
Google "chocolate zucchini cake" for hundreds of recipes!

The key to adding zucchini is to grate it, and then squeeze the excess water out. I also add grated zucchini to my potato pancakes, of course making sure to squeeze the liquid out since it will totally change your recipe.

Yes, I've made it, it's amazingly good. Really moist and you'd never guess there's zuccini in it.
Unfortunatly, I no longer have the recipe. Do a Google search on "Phaedrus, finder of lost recipes".
