I typically go to the gym at night (and lift weights), and wake up the next day feeling fine. Not until later in the evening on the day after working out, do I start to feel that my muscles are sore. Wouldn't it make more sense that my muscles would be sore immediately after working out? Why/how does this latency period happen?

I dont have a scientific backing on my answer but...

your body is going through the adreneline rush period so while you are weight lifting, your body is keeping up with it until you are done. Typically, I get sore when I wake up the next day because during the night, the muscle micro tears that formed while working out are being repaired so that they become bigger. I dont have a reason why it is until at night that you strat aching.

The symptoms you describe are known as DOMS- Delayed Onset Muscle Stiffness. When you exercise, aerobically and by lifting weights, you cause tiny tears in the muscles. As these heal, about 24-36 hours later, they will be a little stiff and sore. This is perfectly normal and happens to most people.

That's not the way the body works. Latic acid is the culprit. What you experience is normal, in fact sometimes you will not feel sore until two days after a work out.
I have advised my student in exercise classes to take a teaspoon of baking soda in a glass of water after a class this often will help.
It might make more sense to be sore right away, but "isn't nature funny?"

because they are still tearing and throughout that next day when you could be lifting a briefcase, or something heavy, opening a door, or anything that's applying more force against the muscles is making them tear even more. It's why some people often choose to run or liftweights in the morning so that the burn continues throughout the day.

a person needs to rest after working out specially when doing resistance training, you wont gain muscle without resting, what i've bin told is to give a days break between workouts (mines generally a mix of cardio and resistance work for bout 1hr 15 mins)

It takes that long for the lactic acid to build up in your muscles.
