It all depends on the temperature you use to braise the protein you really should go low and slow for the best consistency, however, by checking the meat every half hour or so will tell you when it is done - stick the tip a a knife into the meat - it should fall apart almost at touch.. The chuck cut of beef takes longer because it is a tough cut. You can cook it on the stove top or the oven. Usually one hour per pound does the trick. So a 2ish lb roast should cook in the time you asked.

I would not cut the cooking time in half but perhaps a little shorter. The chuck roasts I buy are anywhere from 2-5 lbs. The reason for cooking for so long is because chuck roast is a tough cut, and you need the cooking time to tenderize it. I used to put the roast on a rack with water at the bottom of the pan and sealed very tightly with foil. First, however, I would spread a package of onion soup mix on top of the meat.... Boy, is it ever good!
After cooking for 2 &1/2 hours, you might check for tenderness with a fork; reseal and cook longer if not tender enough. 350 degrees.

It might take slightly less time to roast a 2# cut than a 4# cut, but not half
You want to bring the inside of the meat up to 160º for medium.

This is always so hard to answer. It depends on how well done you like your beef. A meat thermometer works wonderfully for this or why don't you check the internet. I use a meat thermometer that way, you just keep an eye on the temp. of the meat. You can get it anywhere. Sorry I coudn't be of much help.

personally i like to raost mine slowly for a 2lb roast i put beef broth and seasonings in the raost pan and on the roast, cover and cook at 375 for about 2-3hrs until the roast is very tender. the roast should fall apart when you try to lift it out of the roaster pan

I would still cook it for 2 hours at a lower temp. It will just get more tender as the time goes by.
