I agree with April, it really depends on what you're serving it with. If you're going for a curry type of dish, then you should steam your rice (the coconut rice above sounds interesting) - in which case you should pick a long grain rice. But if you're making risotto rice, you'd need a short grain rice variety (carnaroli or vialone nano, or if you really can't find neither, then try with Arborio) - this is best if served with a meat stew. For Spanish dish paella, you should use 'bomba' rice, and should be followed by a salad or some grilled veg.

I made rice tonight, Portuguese style, and it was amazing...
Saute crushed garlic in olive oil; add 1 cup long grain white rice (I used Jasmine) and saute until some of the grains are opaque, and some browned; Add salt and two cups water with a couple chicken (or veg) boullien cubes; bring to a boil, cover tight, simmer 15 minutes. YUMMY!
But if that's not an option, your Spanish rice sounds good! 'Course, it depends what it's going with. Have a nice supper!

now that depends on what you are having with it. If you are making a spicey entre you should have the spanish, but if you are having a savory entre you should have broccoli and cheddar rice.

IT DEPENDS ON WHAT ELSE YOU ARE HAVING.
THIS RECIPE IS REALLY GOOD
COCONUT RICE
INGREDIENTS:
2 cups long grain rice, rinsed and drained
1/4 cup diced onion
1 1/2 cups coconut milk
3/4 cup water
2 slices fresh ginger root
2 teaspoons curry powder
1/2 teaspoon salt
--------------------------------------------------------------------------------
DIRECTIONS:
In a medium saucepan, combine rice, onion, coconut milk, water, ginger, curry powder, and salt. Cover, and bring to a boil. Reduce heat, and simmer for 20 to 30 minutes, or until done.
