Why do people make self-defeating statements such as "There is no truth!" and "There are no absolutes!" and also "Everything is relative!" when those statements themselves claim truth and absolute? It just doesn't make sense. How can people contradict themselves like this?

Many people are afraid to believe anything if they can't have absolute proof of it. I think it's so sad, because they will never see any truth if they keep denying the importance of faith - sometimes you just believe... it's not always a matter of knowing all the facts.
There are many well-educated people who believe in God (including scientists). They recognize that absolute scientific proof is not possible. There will always be those who think they can disprove the existence of God, but they can't. I know that there is a spiritual realm, but I couldn't 'prove' it to anyone. I know people who have seen angels and demons - they are perfectly sane people, and I wouldn't ask them to try to prove scientifically how they could have seen that... it just doesn't make sense to want scientific proof of spiritual things.
Until people realize that, and allow themselves to be more open-minded, they won't think there is any truth, or any absolutes. People think Christians are closed minded. That makes me laugh, since you have to be open-minded to really accept that there is something beyond what we can see and feel - that there is a spiritual realm that is very real. So many things about my faith could not be beleived by being closed-minded.

The same way people can say "You can't prove a negative" when they tried to do just that.

If someone felt that "there is no truth" what is a better way to express that idea and have no contradiction? "There is no truth except that there is no truth?" "There are no absolutes except the one that there are no absolutes"? that's gets wordy. I like the pithy way. There is no truth.

They are just some of the many statements that constitute a simple paradox. For example, the one "You have no reason to believe this sentence." If it's true, the sentence is false. If it's false, then the sentence is true.
