Believe me you will know. Steak smells bad but after a week in the fridge, you should throw it out!

If you just purchased it yesterday (?) and it smells.....take it back frozen or not!!! You putting it in the freezer and thawing it out should not make it smell. Putting it in hot water would be sort of a boiling and that would not make it smell. It would turn color because the outside did start to cook due to the hot water. I have done hot water (I know you are not supposed to) and I have done cold water.....neither make the meat smell. The smell of bad meat is horrible. It really shouldn't smell at all but again what you did to the meat DID NOT spoil it that fast. Could it be too that the color makes you think it is worse than it is? I am not saying you are wrong but I have tossed things myself because of this. I psych myself out! If it smells fleshy, rotten like gosh how do you describe it......I guess like something dead!!! Take it back if it is worth your time and money. I am sure the butcher would give you another. Good luck.

That's caused by the steaks having been exposed to the air while seasoned etc. Sometimes parts of them get that way more than others because of the oxygen. Seasoning also can cause color changes. There's nothing wrong with the steaks, so don't worry. :) Unless meat feels slimy or has a bad smell, it's fine. And seeing how it's meat from yesterday only, and you froze it (thus killing a great deal of the bacteria that could live on it), you're just fine. Freezing doesn't helps with seasoning though, but it won't harm you, anyway.

What was the expiration date on the package? If you froze it then thawed it under hot water, you partially cooked it. That is why it turned grey/brown. Beef should never have much of a smell to it. Bring it back to your butcher and if he wants to stay in your good graces, he'll replace it. As far as "scraping the mold off" is concerned, if a steak is moldy it has really gone bad. Sometimes butchers and chefs "age" their meat and cut off the outside parts of the cut to get to the meat on the inside that hasn't been touched by bacteria. That is done by professionals and it takes more than just a scrape to get rid of that bad meat.

you should never put frozen meat like steak in hot water, my husband was a butcher and he always said steak does not spoil you can scrap the mold off a steak and cook it and it will be fine, of course I never did that but I think you should take it back or toss it.

When in doubt throw it out!
Otherwise call or bring it to your local butcher and explain to them your situation.
A hint for next time, thaw your meat in cold water, I know it sounds as if it will not work but it will usually thaw a NY style steak in about 1/2 hour or so?

It's probably fine, if you got it from a butcher then it is fresh, unless your freezer is messed up, it is good. The discoloration is from the way you thawed it. Next time thaw it in the fridge or in the microwave.

Throw it out..When in doubt trow it out..Any color other than red means it has been compromised.I wouldnt take the chance.Also when smelling meat it should smell well like meat not funny.
