May I recommend bookmarking "The Cook's Thesaurus" at www.foodsubs.com

To make your own they say to: Combine equal parts dried sage, thyme, and marjoram or oregano.

I'd make your own, whatever herbs you choose to use. And try to get fresh ones from the market.

Poultry seasoning is a combination of dried herbs with the predominent herb being Sage. You can mix sage with some of your other seasonings but the all time favorite is Bell's Poultry Seasoning found in all major supermarkets.

Unless you like the taste of sage I would just leave it out all together. To me the taste of sage overpowers everything and that's all I taste. Whenever a recipe calls for sage or poultry seasoning I just omit it, it will not effect the taste that much

The strongest flavor component in "poultry seasoning" is ground sage.

But why substitute? "Poultry Seasoning" is sold just about everywhere packaged spices and herbs are sold (and in some places where they are sold unpackaged in bulk as well).

Try 1/4 teaspoon ground thyme plus 3/4 teaspoon ground sage

I think that's something along the line as of Italian seasoning, like basil oregano etc.

i believe what's in poultry seasoning is safe, thyme and rosemary, garlic and onion. so if you come up with atleast one or two of those you'll do fine.

maybe some ground cloves
experiment with proportions until you like it
