POTATO SKINS
Quarter 1 large baking potato. Cut potato down to about 1/4 inch of the skin. Butter and bake in a 350 degree oven for at least 20 minutes. Then top with cheese and return to oven to melt. To serve, top with bacon crumbles and scallions. Serve with sour cream.

Mitchell's Loaded Baked Potato Skins:
4 medium baking potatoes (about 2 pounds)
Cooking spray
3/4 cup chopped turkey pepperoni (about 3 ounces)
3/4 cup (3 ounces) shredded reduced-fat sharp cheddar cheese
1/2 cup fat-free sour cream
1/2 cup chopped green onions
1/3 cup chopped black olives
1/4 cup bottled salsa
Preheat oven to 425º.
Bake potatoes at 425º for 1 hour or until done; cool slightly.
Cut each potato in half lenghtwise, scoop out pulp, leaving a 1/4-inch-thick shell. Reserve potato pulp for another use. Place potato shells on baking sheet; spray inside of shells with cooking spray. Bake at 425º for 8 minutes or until crisp. Divide pepperoni and cheese evenly among potato shells. Bake at 425º for 5 minutes or until cheese melts. Top each shell with 1 tablespoon sour cream, 1 tablespoon onions, 2 teaspoons olives, and 1 1/2 teaspoons salsa.
Yield: 8 servings (serving size: 1 shell)

INGREDIENTS:
5 large baking potatoes
4 cups shredded Gouda cheese
3 chopped green onions
1 pound pepperoni sausage sticks, quartered and diced

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
Bake potatoes in the preheated oven 1 hour, or until tender. Remove from heat.
Lower oven temperature to 350 degrees F (175 degrees C).
Cut baked potatoes in half. Scoop out potato, leaving a small layer on the skins. Cut halves into four strips. Place strips on a medium baking sheet.
Sprinkle 1 cup Gouda cheese thinly over potato strips. Top with pepperoni, followed by green onions and remaining Gouda cheese.
Bake topped potato strips in the 350 degrees F (175 degrees C) oven 30 minutes, or until cheese is bubbly and lightly browned.

What I called potato peels at my restaurant were just leftover baked potatoes with the thick peels pared off. Deep fry those, and serve with anything like ranch or cheese. Always popular.
You can even use them in place of tortilla chips for a platter.
Now for a boat, I can't answer.

3 pounds russet (baking) potatoes (6 to 8 medium; preferably organic)
1 small head garlic (2 inches in diameter)
3/4 stick (6 tablespoons) unsalted butter, softened
1 teaspoon salt
1/4 teaspoon black pepper
Preheat oven to 350 degrees F.
Prick each potato once or twice with a fork. Cut off and discard top fourth of garlic head; then wrap garlic tightly in foil. Bake garlic and potatoes on same rack in lower third of oven until potatoes are tender, 50 minutes to 1 hour. Remove potatoes from oven and cool on a metal rack 15 minutes. Continue to bake garlic until tender, about 15 minutes more, then cool in foil on rack.
While garlic cools, halve potatoes lengthwise, then quarter each half (to form short wedges). Scoop out potato flesh (reserving it for another use), leaving 1/4-inch-thick potato skins.
Increase oven temperature to 425 degrees F.
Squeeze garlic into a small bowl, discarding garlic skins, and mash to a paste with butter, salt, and pepper using a fork.
Divide garlic paste among potato skins (about 1/2 teaspoon each), spreading evenly, then roast skins in a large shallow baking pan (1 inch deep) until golden and crisp, 20 to 25 minutes.

Bake your potatoes, cut in half length wise and let them cool
Scoop out the guts with a spoon
Deep fry until they are golden brown
fill with bacon bits, green onions and diced tomatoes
top with grated cheese and bake in the oven until the cheese starts to bubble.

Here you go...
Slice your potato in half
Brown the outsides in butter in a saute pan with season salt
Place on a pizza stone - like Pampered Chef and cook at 450 for 15 min. The stone makes the skin crisp.

Scooped out butter, blue cheese dressing and sour creme and chives, bacon bits.
They are a little messy. You have to eat them in bed with no napkins!!!
