I like just about any kind of fish just because it gives me a break from boring chicken or steak. I just had grilled salmon a few nights ago. I also enjoy fried catfish or tilapia.

Well, unfortunately I don't care for salmon that much, but know it is good for you, so I have tried cooking it and eating it several different ways. I found I like it as a cake, baked. Fresh salmon put in the food processor, taken out and mixed with egg and lightly sauteed red bell pepper and green onion, fresh lemon juice, of course, & lime juice is good, also. I like to mix in some ground up oatmeal, which sounds strange, but I like it. Bake and serve with lots of fresh lemon or lime juice. I never measure, just go to it.

I also enjoy salmon, not only because it is full of nutrients, but because it tastes good when prepared in a variety of ways. Secondly, because fillet of salmon is bone free and has inoffensive odors while being prepared. For lunch, I enjoy smoked salmon (lox) and cream cheese on a bagel. Oops, got to run down to the Jewish Deli, I made myself hungry.

I like to grill so I would have to go with Tuna Steaks. Very versatile. Easy to cook medium rare. Lots of different sauce options from the darker/peppered style to light and creamy over a bed of rice. Tuna for me.

I love salmon and where I live is one of the places that it is harvested from so we have great salmon here. It is so versatile, you can grill it, bar-be-que it, poach it, fry it, bake it and on and on. And recipes, don't get me started. My favorite is baked and I have my own secret recipe that never fails, my guests always love it.

Fried Catfish.

I know it isn't the most healthy fish on the market, but having it reminds me of the summers I would visit my grandparents in Arkansas and we would go to the restaurant that had the best fish, fries and hushpuppies.

My grandparents are long deceased now, and I have no reason to return to AR, but still fix up a batch of catfish nuggets on occassion.

Ahhh, the memories of "yester-year".

Salmon, mostly because I got addicted to it in college, but can't get it fresh where I live. Absence makes the heart grow fonder.

Bass baked in salt, because it is delicious, and if I'm having it that means it was swimming in the river just a few hours ago.
