I think if you did it would end up pretty gross. Pudding needs the milk to make it thick and actually taste good...water would probably just turn it into vanilla/chocolate/etc. flavored water.

No yo cant use water. I never tried it but my brother who will eat anything or thought he would wasted about four boxes of Jello instant and cooked pudding to find out that it doesn't taste good.

Ewwww. The pudding mixture needs the fat in the milk to help thicken up. Even skim milk will make a thin pudding.

I've tried it with soy milk, and it doesn't work because of the thickening the regular milk does. Try blending in corn starch mixed with cold water and boiled, or some firm tofu. Good luck! =)
