Cut up about three slices of bread spread with butter and jam and arrange them in an oven dish. Scatter some currants and raisins between them. To be quick, if you haven't time to make it, a tin of custard which I would thin down a little with some milk to almost cover bread. Into oven, gas Mk 5 for about 20 mins. Good luck

3-4 thin slices of bread and butter
1-2 oz currents or sultanas
half oz. caster sugar
Three quarters of pint of milk
2 eggs
Ground Nutmeg.
Cut the bread and butter into strips and arrange, buttered side up, in layers in a greased ovenproof dish, sprinkling the layers with the fruit and sugar. Heat the milk, but do not let it boil. Whisk the eggs lightly and pour the milk onto them, stirring all the time.
Strain the mixture over the bread, sprinkle some nutmeg on top and let the pudding stand for 15 mins. Bake in the centre of the oven (moderate, 350F, gas mark 4) for 30-40 mins, until set and lightly browned.

Bread and Butter Pudding
Ingredients
1 teaspoon ground cinnamon
1/4 cup sugar
4 tablespoons butter or margarine, more or less as needed, at room temperature
5 slices crust-on white bread
1/2 cup golden raisins
2 cups milk
2 eggs

Instructions
Preheat oven to 350 degrees F. Add cinnamon to sugar in cup and mix well. Set aside. Generously spread one side of each piece of bread with butter or margarine. Cutting diagonally, slice each in half. Arrange triangle slices in pan, slightly overlapping, with butter-side up and cut edges facing the same direction, making a spiral. As you add the bread, sprinkle with sugar, cinnamon, and raisins. Put milk in small bowl, add eggs, and using whisk or fork, mix to blend well. Pour milk mixture over bread and raisins in baking pan. Set aside for about 15 minutes for bread to absorb liquid. Bake in oven for about 30 minutes, or until top is golden brown. Serve the pudding while still warm in individual dessert bowls. It is eaten plain or with cream poured over it.

Yield: 4-6 servings

BREAD AND BUTTER PUDDING
Making bread pudding is a good way to use up day-old bread. Gary Rhodes creates this sensational version of the classic English dessert with cream, milk and egg yolks, so it is ultra-rich.
1 1/2 cups whole milk
1 1/2 cups whipping cream
1 vanilla bean, split lengthwise
8 large egg yolks
3/4 cup plus 2 tablespoons sugar
1/4 cup (1/2 stick) unsalted butter, room temperature
1 1-pound loaf white bread, slices cut 1/2 inch thick, crusts trimmed
2 tablespoons golden raisins
2 tablespoons brown raisins

Combine milk and whipping cream in heavy large saucepan. Scrape in seeds from vanilla bean; add bean. Bring milk mixture to simmer. Whisk egg yolks and 3/4 cup sugar in large bowl to blend. Gradually whisk hot milk mixture into yolk mixture. Set custard aside.
Butter 9x9x2-inch glass baking dish. Spread 1/4 cup butter over both sides of bread slices. Arrange 1/3 of bread slices in single layer over bottom of prepared dish, trimming to fit. Sprinkle half of golden raisins and half of brown raisins over bread. Cover with another single layer of bread. Sprinkle remaining raisins over. Layer with remaining bread. Discard vanilla bean from custard; pour over bread. Let stand until some custard is absorbed, about 20 minutes.

Position rack in center of oven and preheat to 350°F. Bake pudding until custard thickens and begins to set, about 20 minutes.

Preheat broiler. Sprinkle remaining 2 tablespoons sugar over pudding. Broil until sugar browns, rotating baking dish for even browning and watching closely, about 2 minutes. Let pudding cool slightly. Serve warm.
