dont know what to do with them..any ideas?

Sear and grill till medium rare at the most (venison steaks should not be well done, criminal waste!) then deglaze the pan with some port or madeira, add a couple of tablespoons of cream to the reduced alcohol if desired to warm through then pour over the steaks ...... lucky you, what time is dinner?

One of my favorite ways to cook them is to cut them into serving size pieces, lay them one at a time on a cutting board and cover it with a thin coating of flour. Using a tenderizer if you have one, a heavy knife will do if you don't, pound the flour into the steak. Flip it over and repeat on the other side. Do all pieces of steak. Heat fry pan up fairly hot with butter or margarine. Fry steaks quickly one one side and then flip over once. You should end up with a nice "crust" on them. Serve right away. Good stuff !!

PEIRCE THE STEAKS AND PLACE GARLIC AND SAGE IN THE SLITS - RUB OLIVE-OIL TO SATURATE.........
AND ON THE GRILL-USE SOME LONG METAL SKEWERS TO HOLD THE STEAKS OFF-OF THE GRILL (SUSPEND OVER THE HEAT ) (TRUELY-BEST OVER MESQUITE ) LET THE HEAT KINDA BROIL THE MEAT YOU'LL HAVE TO ADD MORE OIL AS IT COOKS (THE OUTSIDE WILL BUBBLE AND DRY IF YOU DON'T . LEAVE OVER THE HEAT UNTILL THE OUTSIDE IS SEMI CHARRED THE INSIDE WILL BE A MED-TO-MED WELL !!
ENJOY THIS WITH A MIX OF SAGE,HONEY,DASH-OF TABASCO,YELLOW MUSTARD AND HORSE RADISH -ALL BLENDED INTO A SAUCE !
SALT AND PEPPER AT SERVING !!

Yummy!!!!

Get a bottle of Maggi sauce (available in most supermarkets) and pour lightly over steaks. Grill to desired doneness, and enjoy!!!

I'm so jealous. You can do anything with venison that you can do with any other meat. Find you a good recipe for steak and go for it.

You must first marinade them overnight then cook in a quite strong sauce with your veg ladling the gravy over them regularly choose your wine carefully they deserve it

treat it like regular steak. It is a bit drier though, so a little extra oil might be needed.

Avoid marinade though please. You will ruin it, just like you ruin regular steak with it.

i fry my venison i roll in seasoned flour and fry in butter but my venison is cut very thin and boneless but comes out really tender
