If you are an EU national yourself and you are legally married to a non-EU national, your wife will have the same rights as you do within the confines of the EU as long as you remain legally married. Not wishing to put a fly in the ointment as you've only just got married and all, but if you were to separate and/or divorce, she will lose all the rights to residency/work etc from the date of your separation and would lose any right to remain.

At least that is my understanding. You could perhaps get more info from the Home Office or the Spanish Embassy?????

She will need a residence permit for Spain and she can apply for this status at the Spanish Embassy as your wife. With Spanish residency she should be also allowed to work.
Without a residence permit she can spend up to 90 days in Spain, but would not have the right to work. You might also check at the nearest Spanish Embassy.

She cannot work in Spain or any other EU country on an Irish spouse permit.
However, if your gonna move to spain to work for a year, then you can apply for a long term Shengen Visa for her as your spouse so she can accompany you in Spain. She will then be allowed to work in Spain. Under EU regulations, the Spanish authorities CANNOT refuse the spouse of an EU national who currently has residence rights in another EU country the right to accompany their spouse into another EU country.
What I suggest is that you visit your local Spanish Embassy or consulate, bring all your documents and marriage certificate. If you dont have any Spanish representation in your country, then go to any other Shengen country representation in your country (france, italian, belgian etc...)

Good Luck with your application, and hope all goes well for you both.
