Congratulations on the big "d" decision! I'm proud of you!

I'll start off with what we feel deprived of most when dieting, lol...the snacks!

Here's a cake recipe- sweet and yummy!

Healthy, Low Fat Apple Cinnamon Cake
Flour - 3/4 cup
Eggs - 3
Caster sugar - 1/2 cup
Apples - 4
Raisins - 1/2 cup
Ground cinnamon - 1 to 2 tsps
Honey - 3 to 4 tbsps
Water - 1 tbsp
Low fat soft cheese - 1 cup
Low fat fromage frais - 4 tbsps
Lemon juice - 2 teaspoons
Apricot glaze - 3 tbsps

Preheat oven to 375, and lightly grease a cake tin.
Beat the eggs with sugar in a bowl until thick.
Sift the flour and cinnamon over the egg mixture, and mix in with a spoon. Add in to the prepared cake tin, and bake for 25 to 30 minutes.
Meanwhile, peel and core the apples. Then cut 3 apples into thin slices. Put in a pot, and add 2 tablespoons of honey and 1 tablespoon of water. Cook on low heat for 10 minutes.
Add in the raisins and cinnamon, and mix well. Let it cool.
In a bowl, mix the soft cheese with 1 tablespoon of honey, fromage frais, and the lemon juice. Mix well.
When the cake is done, cut it in half horizontally - so you have 2 round halves. Spread on 2/3 of the cheese mixture, and top off with the cooked apples and sauce. The place the other half on top.
Spread the leftover cheese mixture on top of the cake. Thinly slice the last apple, and lay it in a circular shape. Brush on the apricot glaze, and its ready to serve.
For this low fat cake recipe, instead of using apple, you can also use other fruits such as peaches, pears, and oranges.

Then, there's also this delicious Yogurt Sundae

Passion Fruit Yogurt Sundaes
Passion fruit - 2 (cut in half)
Strawberries - 300 grams
Peaches - 2 (chopped)
Icing sugar - 2 teaspoons (optional)
Low fat frozen yogurt - 8 scoops (350 grams)

Puree half of the strawberries. Scoop out the passion fruit pulp and add to the strawberry sauce. (Sweeten if needed)
Place the other half of strawberries and peaches in 4 cups (leave a few for decoration). Add 2 scoops of yogurt to each cup, and top off with the remaining fruits.
Pour the strawberry puree over the sundae and serve.
How's that for a delicious, low fat, and easy to make dessert recipe? You can use other types of fruits in place of the strawberry and peaches. For example, mangos, oranges, pears etc...

Now, for some meals...Here's two of my fav's

Low Fat Grilled Chicken Salad Recipe
Boneless, skinless chicken breast - 400g
Red potatoes - 300g (cut in half)
Green beans - 200g
Orange marmalade - 2 tbsps
Leaf lettuce - 3 cups (torn)
Oranges - 2 (peeled and sectioned)
Orange juice - 1/4 cup
Salt and black pepper - add to taste
Orange zest - 1/2 teaspoon
Diced ginger - 1/2 teaspoon
Red wine vinegar - 1 tbsp

Mix orange juice, marmalade, salt, pepper, orange peel, and ginger. Take about 1/4 cup and brush on to the chicken. Then grill until both sides browned. Cut the chicken into slices.
Boil the potatoes for 8 to 10 minutes until tender. Also boil the green beans for 2 to 3 minutes until cooked. Then drain the water.
In a large salad bowl, mix the chicken, orange slices, potatoes and green beans. Toss evenly with the orange sauce mixture.
This delicious, low fat chicken recipe has only 4 grams of fat, and serves four people.

Miniature Ham And Pepper Pizzas
1/2 loaf of bread
Parma Ham - cut into strips
1 roasted red pepper
1 roasted yellow pepper
50g of reduced fat mozzarella cheese
Black pepper
Basil leaves

Cut the bread into 2cm thick slices, and toast until golden.
Cut the roasted peppers into strips, and place on the bread with the ham.
Cut the mozzarella into slices and place on top of the pizza. Sprinkle some pepper on.
You can either grill of oven bake these pizzas. They won't take too long to cook. Cook until the cheese is melted.
Garnish with basil leaves.
You can use any type of bread for this pizza recipe. I like using garlic bread. It adds a little extra flavor.

It sounds like you are working hard at your goal to lose weight try switching things up a little bit. I just lost 180lbs in the last year it was not hard but not easy at the same time. Exercise is good as much as you can but because I have a health condition I am not able to exercise much so try doing the biggest portion of the weight loss on your food. 5 small meals a day 3 that consist of 3 oz of protein and a steamed vegetable with light butter 2 that are small healthy snacks in between those meals Try to avoid all breads, starches, candies, and simple sugars. Always remember to have a small snack before bed like a fruit or vegetable with low fat dressing This will help your metabolism work through the night you should be drinking 6-8 glasses of water based drinks a day Try the new Mio drinks they are good and have no sugar or calories so you can drink it every glass If you stick to this diet strictly your metabolism will work at full potential and help you lose weight faster then you can imagine. Don't give up you can do it. I believe in you!

Plenty:

Mr. George Foreman's Grill is a top notch way to cook healthy lean meat. Really does take a lot of the fat away.

Try this one out:

Ingredients:
1 breast of chicken cut into smaller cubes
1/4 chopped onion (not finely chopped)
some cilantro
soy sauce

Directions:
-Take the chicken cubes and place them onto a hot george foreman grill shutting the grill on top of the pieces. (the grill should be hot).
-after 3 minutes, open the grill and add to that the onions you chopped earlier. Shut the grill
- cook for an additional one minute.
- take the chicken out and put in a vessel, (preferably a bowl).
- Add soy sauce to this (similar to yakitori with a twist though).
- garnish with cilantro

Voila..a great snack

Very Simple

Low Carb Tortillas
Sliced Avocados
Sprouts
Soy Bacon Strips

You can vary it like diced tomatoes and onions but Its soo good especially if you turn your avocado slices into guacamole

Peppers, Carrots, Mushrooms, Tomatoes, Potatoes, onion. Chop into 2 chunky pieces. toss in olive oil, thyme, rosmary and crackled black pepper. put on baking tray. cover with tin foil. Preheated oven. Gasmark 4. about 2 hours. YUM!

Chicken, turkey, and fish are all low fat , all veg is low fat, all fruit is low fat, roast potatoes using olive oil just pick n mix em.
