Ugh! Tough question. I have a 3 year old too, but for some odd reason mine loves healthy food! *LAUGHS*

Does your kid like spaghetti? If so, make it and add shredded carrots and zucchini to the sauce.

How about something more simples,as Ramen noodles and then add the shredded carrots to it?

Grilled cheese sandwich, with a thin slice of tomato in it? I know it's not a real meal, but it's something.

My kids spent a whole month eating nothing but ramen noodles.... They will survive!

Mac & cheese is definitely one of a child's favorites! If they are a meat eater, chicken nuggets is popular with children.. Many children also love pasta, as long as the sauce isn't too chunky. A lot of the times they get grossed out by chunky sauce! Hamburgers, cheeseburgers. Hot dogs.. If you're looking for something healthy, make a nice salad with it. You could also make a healthy pizza. They sell dough at most supermarkets, and you can top it with tomato sauce, mozzarella, and your favorite toppings! Just throw it in the oven until the cheese is golden.. Or maybe pizza bagels? Children love those! Fruit salad for dessert!

Just a tip, if the child is going to be there while you are cooking, have them help you out. Children are MUCH more likely to want to eat a food if they participated in making it! Simple things, but make them feel like they are a big help. Have them mix, put napkins, forks, and spoons on the table.=

Go to Family Fun Magazine's website. Just search for April Fools Day menu. This stuff is so cool. One of the recipes is a hamburger mix in a muffin tin and is topped with pink or blue mashed potatoes. The picture looks just like a cupcake, but it's good for you.

How about cutting up hot dogs into macaroni and cheese, and serving with applesauce and celery with peanut butter and maybe raisins (ants on a log).

Get your 3 yr old involved! He/she can put the ants on the peanut butter (or cream cheese) in the celery. Applesauce is simple to make from apples, just cut up and seed, and boil with a little water until soft, and add sugar and cinnamon to taste, and mash, removing the skins. Your child can help you to "taste" the applesauce and decide when there is just the right amount of cinnamon and sugar in it.

The mac and cheese can be made from scratch or from a box, depending on your time. To make from scratch, just make a white sauce, boil the macaroni, and put it all together with grated cheese. Your 3 yr old can add the cheese, help you stir, and taste to determine the level of salt and pepper to add (with you).

INGREDIENTS:
1 pound ground beef
1/2 pound ground pork
1/2 cup chopped onion
3/4 cup bread crumbs
1 egg
1/2 cup milk
1 tablespoon dried parsley
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 teaspoon pepper

1/4 cup vegetable oil
1/4 cup all-purpose flour
1 teaspoon paprika
1 tablespoon salt
1 teaspoon pepper
2 cups boiling water
3/4 cup sour cream

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.
Bake for 30 minutes in preheated oven. Turn frequently so they brown evenly on all sides.
To make the sauce: In a saucepan, combine oil, flour, paprika, 1 tablespoon salt, and 1 teaspoon pepper. Cook over medium heat until sizzling. Stir in hot water and sour cream until smooth and heated through.
When meatballs have cooked 30 minutes, pour sauce over the top, and return to the oven for 20 minutes, stirring occasionally.

Hotdogs!Take the mustard and ketchup and draw hair,eyes and a mouth on the hotdog.Kids want to eat them everytime.
