What's your favorite cheese combo on a quesadilla? Or just one, if you like one-cheese quesadillas. I love cheddar with whatever!

I live to put a combination of Cheddar, Monterey Jack and Marble (if I have any in the house). Also, put some shredded Parmesan in the middle of the tortilla shell. This gives it some saltiness without having to actually use salt.

Try Goat Cheese with sauteed onions and peppers. The cheese is really creamy and the veggies add some substance. Pico on the side.
