~*~Here are some of our family's favorite brownie recipes! Enjoy!

CARAMEL FILLED BROWNIES #1

1 box brownie mix
3 lg. Cadbury Carmello Candy Bars

Prepare the brownies as directed on the box. Pour into a greased 9x13” pan. Place the candy bars side by side onto the brownie batter. Push down a bit & spread a little batter over the top to cover the candy bars. Bake as directed on the box. When cool, cut into 12 squares.

CARAMEL FILLED BROWNIES #2

1 box brownie mix
1 bag Kraft caramels

Unwrap, & soften caramels in microwave just enough to make them pliable. Roll or press softened caramels flat. Place on tray & set aside. Prepare the brownies as directed on the box. Pour half of the batter into a greased 9x13” pan. Place an even layer of flattened caramels on top of the batter. Pour 2nd half of batter over top of caramels. Bake as directed on the box. When cool, cut into 12 squares.

APPLEBEE’S WALNUT BLONDIE (BROWNIES) & MAPLE BUTTER SAUCE

2 c. sifted flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 c. chopped walnuts
2/3 c. butter or margarine
2 c. packed brown sugar
2 egg, beaten
2 T. vanilla extract
1 c. white chocolate chunks or chips

Preheat oven to 350ºF. Sift flour; add baking powder, baking soda & salt. Sift again. Add chopped nuts. Mix well & set aside. Melt butter. Add brown sugar & mix well. Add egg & vanilla extract. Blend well. Add flour mixture, a little at a time, mixing well. Stir in white chocolate chips. Spread in a 9x13” square pan. Bake for 20 to 25 minutes or until a wooden pick inserted in center comes out clean or with slightly fudge-looking crumbs. Top should be shiny & firm when you touch the center with a finger. Do not over bake or it will be dry. (Oven temps may vary so watch brownies closely). While they are still warm, cut brownies into 12 pieces, they may be a little crumbly, because they are more cake like in texture. Place a brownie on a plate & top with 2 scoops of ice cream. Then drizzle with “MAPLE BUTTER SAUCE” (use one of the 2 following recipes), & sprinkle with more nuts.

MAPLE BUTTER SAUCE #1

1 1/2 c. maple syrup
1 c. butter
1 1/2 c. brown sugar
1 c. walnuts, chopped (optional)

Combine syrup & butter, cook over low heat until butter is melted. Stir in brown sugar until dissolved. Add walnuts, if desired.

MAPLE BUTTER SAUCE #2

1 1/3 c. sugar
1 c. whipping cream
2/3 c. butter
2 tsp. maple flavoring

Combine sugar, whipping cream & butter in a sauce pan & bring to a boil. Cook for 2-3 minutes, remove from heat & add flavoring.

CRÈME de MENTHE CHIP BROWNIES

1 pkg. (19 oz.) fudge brownie mix
1 pkg. 10 oz. crème de menthe chips

Preheat oven to 350°F. Grease bottom ONLY of a 9x13” baking pan. Make brownies according to pkg. directions. Stir in 1 c. crème de menthe chips. Pour into the prepared pan. Sprinkle the rest of the pkg. of chips, probably about 1/2 c., over the top of the batter. Bake for 30 minutes. Cool on rack then cut & serve.

ZUCCHINI BROWNIES

1 1/2 c. sugar
1/2 c. butter
2 eggs
2 T. cocoa
1/2 tsp. salt (optional)
1 tsp. cinnamon
1 tsp. soda
2 c. flour
2 c. zucchini, grated
2 tsp. sugar
1 c. chocolate chips
1 c. nuts

Preheat oven to 350°F. Cream sugar, butter & eggs. Sift dry ingredients & add alternately with zucchini. Pour into greased 10x15" jellyroll pan. Combine 2 tsp. sugar, chocolate chips, & nuts; sprinkle over top. Bake for 30 minutes.

Layered Brownies:

4 (1-ounce) unsweetened chocolate baking squares
1 cup butter or margarine
2 cups sugar
4 large eggs, lightly beaten
1 cup all-purpose flour
1 cup chopped pecans, toasted
Vanilla Cream Topping
Brownie Glaze

Microwave chocolate and butter in a 2-quart glass bowl at HIGH 1 1/2 minutes or until melted, stirring twice. Add sugar and eggs, stirring until blended. Stir in flour and chopped pecans. Pour into a lightly greased, aluminum foil-lined 13- x 9-inch pan.

Bake at 350° for 20 to 23 minutes. Cool on a wire rack 1 hour.

Spread cooled brownies with Vanilla Cream Topping; chill 45 minutes. Pour Brownie Glaze over Vanilla Cream Topping, and spread evenly. Chill 1 hour. Let stand at room temperature 15 minutes; cut into 1-inch squares.

Yield: Makes 48 1-inch squares

Double Chocolate Brownie Recipe
This brownie recipe is made with chocolate and chocolate chips, along with pecans or walnuts, if you want.
1/4 cup butter
3/4 cup sugar
1 teaspoon vanilla
1/4 cup corn syrup
2 eggs
2 ounces unsweetened chocolate, melted and cooled
1 cup all-purpose flour, sift before measuring
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup chocolate chips
1/2 cup chopped pecans or walnuts, always an option


Directions for this brownie recipe.
Cream together butter and sugar until fluffy. Add vanilla and syrup and continue beating. Beat in eggs and cooled chocolate. Into a separate bowl, sift dry ingredients. Stir dry ingredients into the batter. Fold in chocolate chips and pecans. Spread brownie mixture into a greased and floured 9-inch square baking pan; bake at 350° for 20 to 25 minutes. Cut brownies into bars.

I don't know of a good recipe from scratch but The Barefoot Contessa (she is on the Food Network all the time) has a packaged brownie mix that can be purchased at Macy's (I think you can order on line too). It is DIVINE...SO GOOD!!!! It's so easy...it's like making them truly from scratch only better!!! Good luck and enjoy!!!!

I have tried this recipe before and it is delicious!

Scrumptious Brownies

1 pkg. (8 squares) BAKER'S Unsweetened Baking Chocolate
1 cup (2 sticks) butter or margarine
5 eggs
3 cups sugar
1 Tbsp. vanilla
1-1/2 cups flour
2 cups PLANTERS Walnut Pieces

PREHEAT oven to 375°F. Melt chocolate and butter in small saucepan on very low heat, stirring constantly. Cool slightly.
BEAT eggs, sugar and vanilla in large bowl with electric mixer on high speed 10 min. Add chocolate mixture; beat on low speed until well blended. Gradually add flour, mixing until well blended after each addition. Stir in walnuts. Spread into greased 13x9-inch baking pan.
BAKE 35 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely in pan. Cut into 32 pieces to serve.

BROWNIES WITH CREAM CHEESE SWIRL
For swirl
3 ounces cream cheese, room temperature
2 tablespoons (1/4 stick) unsalted butter, room temperature
1/4 cup sugar
1 large egg
1 tablespoon all purpose flour
1/2 teaspoon vanilla extract

For brownies
6 ounces sweet baking chocolate (such as Baker's German's Sweet Chocolate), chopped
3 tablespoons unsalted butter, room temperature
1/2 cup sugar
2 large eggs
1/2 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1 cup semisweet chocolate chips
1/4 cup chopped walnuts

Make swirl
Preheat oven to 350°F. Lightly butter 8-inch square nonstick baking pan. Using electric mixer, beat cream cheese and butter in medium bowl until light and fluffy. Gradually add sugar and beat until well blended. Beat in egg. Mix in flour and vanilla. Set mixture aside.

Make brownies
Stir baking chocolate and butter in heavy small saucepan over low heat until smooth. Cool slightly. Using electric mixer, beat sugar and eggs in large bowl until slightly thickened, about 2 minutes. Mix in flour, baking powder and salt. Mix in chocolate mixture and extracts. Stir in chocolate chips and walnuts.

Spread half of chocolate batter (about 1 1/4 cups) in prepared pan. Using rubber spatula, spread cream cheese mixture over chocolate batter. Spoon remaining chocolate batter over top of cream cheese mixture. Using tip of knife, gently swirl through batter, forming marble design. Bake brownies until tester inserted into center comes out with a few moist crumbs attached, about 30 minutes. Cool brownies in pan on rack. Cut into squares.

Makes 16.

Use Betty Crocker ready mix, and add to it chocolate chips and walnuts to crank it up another notch!
