a heavy skillet is one made out of a heavy material...the most common is cast iron. Good Luck!

Heavy skillets are thick and retain heat better than cheap thin ones. Retaining heat is very important if you're doing something like searing meat because then the skillet won't cool down as much when you add the cold or room temperature meat. Also, the thickness means there aren't really pronounced hot spots so it's much less likely that food on the bottom of the pan will burn. Really, you should always use a heavy skillet because they just make better food.

Cast iron is a good "heavy skillet." I used to use mine a lot when I ate meat, not so much now that I'm vegetarian. If you use stainless steel, then be sure to get one with at least a thick aluminum disk sandwiched in stainless steel on the bottom. Even better are the ones that are thick aluminum all the way around, sandwiched between stainless steel. These are much more expensive, but worth it if you cook a lot and have the money.

You are probably refering to a cast iron skillet. Their weight is according to their size. If you decide to purchase a true cast iron skillet, make sure you "burn" it, meaning layer it in fat (lard) and put it in the oven on 250 for about an hour. It will smoke up some! Then wash it. Now, when you start using your skillet, make sure that after every use you wash it, then put it in a warm oven for 15-20 minutes. I'm not crazy everyone, cast iron will rust very quickly, this can cause food poisoning! If you wash it and "burn" it often, the rust should never be a factor. By the way, they are the best!
