EF-S lenses can only be used on Canon's Digital SLR cameras...and EF lenses can be used on all film AND digital SLR cameras.
There is no "one better than the other'
Canon make many lenses...some cheap and not too good, some ok to good...to excellent.
It all depends on how much you are prepared to pay for the best ones.

The "S" in EF-S stands for "short back focus", which means that the rear element of the lens is closer to the image sensor than on regular 35mm SLR cameras. The biggest advantage is that it allows for smaller and less expensive wide angle lenses.

The EF-S lenses have a smaller image circle. They are intended for Canon's digital SLR cameras with a 1.6 crop factor (all dRebels, 20D and 30D)
