Well, i dont know much about any of the life sciences, but i think, a herbaruim may be the simplest one....
Probably, you can do it for local plants...collecting their leaves, studying them, writing briefly their characteristics, medicinal values etc.
But moslty the level of the project depend on the scale you want to extend it and the degree you are pursuing.....

Two things come to mind:

Growing plants in different colored lights to make comparisons, something that had been done before I am sure.

or

Study the effects of some drug on plants, something that would make sense to check, not antihistamine or pain killers.

Say, Lithium concentrations, or Calcium channel blocker effects, something doing with the ions on the plants. Keep in mind the drug has to be absorbed, Li has a chance, I don't know about the others.

This is very easy. Find an endangered plant near your home. Explain why it is endangered, and tell the people how they can help it survive.

It's all on the internet. Just pick and choose! Look to your state's web-site, there will be sites about natural resources. Just pick your plant!
