quesadillas are easy. you can sautee vegetables, meats, or any combination in a non-stick frying pan first, then put the sauteed items on a plate and wipe the pan out. then put a flour tortilla in the pan on med-high heat, add sauteed veg or meat, sprinkle w/ cheese, fold in half and brown. serve w/ salsa, sour cream, anything you like. Very versitle and one pan to wash. can be as healthy or bad for you as yu like.

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them.

Here's two really easy and yummy recipes :)

Pizza Pasta Salad

3 cups penne pasta, cooked, drained and cooled
4 medium tomatoes, chopped (about 4 cups)
12 slices OSCAR MAYER Hard Salami, chopped
1 cup KRAFT Natural Mozzarella Cheese Crumbles
1/2 cup chopped fresh basil
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing

TOSS all ingredients in large bowl.
COVER and refrigerate at least 1 hour to blend flavors.

Burrito Bake

1 lb. lean ground beef
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
3/4 cup water
12 TACO BELL HOME ORIGINALS Flour Tortillas
1 can (16 oz.) TACO BELL HOME ORIGINALS Refried Beans
1 cup KRAFT Mexican Style Shredded Cheddar Jack Cheese

PREHEAT oven to 350°F. Brown meat in large nonstick skillet on medium-high heat; drain. Add seasoning mix and water. Bring to boil. Reduce heat to low; simmer 10 min., stirring occasionally.
PLACE 4 of the tortillas on bottom of greased 9-inch pie plate. Cover with half each of the refried beans, meat mixture and cheese. Repeat layers once. Top with remaining 4 tortillas.
BAKE 30 min. or until heated through and cheese is melted. Cut into wedges to serve.

Dessert Item that everyone I know loves when I make it.
Called Death By Chocolate.

It's easy but time consuming to make.

Ingredients:
1 - Dunken Hines Brownie Mix - ususally needs a few eggs water and oil to make Brownies.
3 - Packs Nestles Instant Mouse Mix - needs 2 cups of milk if I'm remembering the directions correctly (doing this from memory)
1 - Pint Heavy whipping cream - I usually add a table spoon of powdered sugar.
1/2 - cup Kalua and any extra you want to drink while working
8 - Heath (or Scores) toffee bars - stick them in the freezer you are going to need to crush them up and it works best when they are frozen.

Also needed 1 big serving bowl, it has a name for the type of bowl that works best, I just don't remember it and probably can't spell it correctly.

1. Make brownies per cake like instructions Dunken Hines often has cake like instructions or moist instructions, you want the cake like. Let cool.
2. Make the Mouse per instructions stick in frig to cool.
3. Whip the Whipping Cream till good and thick. Add Powdered Sugar but don't mix too much after adding just enough to get it mixed in. Stick in frig.
4. Poke holes in the brownies and pour on the Kalua to soke in.
5. Crush up Heath Bars. When frozen I usually just slam them on the table about 5 or 6 times each but a meat mallet also works well or you can put them in a food processor using the chopper attachment.
6. In the big bowl layer half of the brownies, then half the mouse, then half the whip cream, then half the heath bar... REPEAT.
Your done have fun licking spoons and don't drink too much of the Kalua along the way.
By the way if you really want to do this up big you can make home made brownies and home made mouse. I just find that the Dunken Hines brownie mix is as good as my home made and I have no idea of how to make chocolate mouse so I always use the instant. Lastly, you can substitue Cool Wip for the whip cream but it's no where near as good but if your going for speed this does make it easier. enjoy.

Stuffed bell peppers! Buy some large green bell pepppers,wash them cut the tops off,clean the insides out, then fry up a box of rice a roni any flavor you want, fry up ground hamburger meat, mix the rice and hamburger together, then open a jar of spagetti sauce pour a little sauce in the meat and rice.You then put the mixture inside the peppers,put the tops back on, take remaining spagetti sauce pour on top of peppers you then throw them in the oven at 350 degrees bake for about 1 hr.

pork stroganoff - really easy!
dry fry strips of pork loin steaks till light brown. take out of pan & fry thinly sliced onion in the pork juices. (add garlic at this stage if u like). add some sliced closed cup mushrooms & fry till cooked. (I usually put a couple of sliced chestnut mushrooms in or everything tends to look 'bland'). reintroduce the pork, cook all together till pork is done to your taste & add some soured cream (again the amount is to yr taste), a little chicken stock & if it's for something special a dash of white wine. serve with pistacchio potatoes(ask me 4 recipe!) - a really easy meal to enjoy without any hassle. hope u enjoy if u try.

Potato frittata (omelet)

Saute sliced potatoes and onions in a pan until potatoes are soft, then pour in a whisked egg/milk/spices (parsley, chives, etc) mixture, enough to fill pan 1/2 to 1 inch thick. Cover and cook on low. Serve hot, warm or cold. Good as leftovers, too.

BTW, it's very inexpensive, too.

One of my favorites is Italian Sausage, Beef gravy and green peppers over rice.
Cook a pot of rice.
Brown sausages I like the hot but any will work sweet or mild.
Cut into bit size pieces.
Slice green peppers put in with sausage.
Top with a can of beef gravy or more if you like alot of gravy.
Serve over the rice. 20 minutes max so so good.
I have a ton of recipes that are 20 minutes or less too email me if you want more.

Fried chicken:

Set up:

A dozen pieces of chicken, your choice. Soak overnight in salt water, in the fridge.

Preheat oven to 400. Heat skillet with about 1/2 inch of oil on medium or medium high. The oil shoul be hot but not smoky.

Two storage sized baggies (gallon sized), one with a cup of pancake mix, one with one cup pancake mix and one cup of finely crushed spicy pork rinds (they are carb free)

One bowl with two beaten eggs.

Place the chicken in the bag with the pancke mix and shake.
Then dip each piece in the egg and place in the second bag, with the pancake mix and pork rinds.

Fry in the oil until golden and then place on a baking sheet and bake for about 40 minutes.
