Don't make it by yrself.
It's easier to buy it online.

1) You have to know what the potential alcohol is before you ferment by taking a specific gravity with a hydrometer before you add the yeast.

Then, when it's done, you measure the specific gravity again and subtract this one from the original...the difference is proportional to the alcohol produced.

2) Before, with, and after food...depends on your mood, the wine, and the food. There is no one answer.

3) Of course it's not sweet at all...you got a complete fermentation. The yeast you added eats the sugar and converts it into CO2 and alcohol. When there's no more sugar left, the fermentation stops, you have all the alcohol that there is to produce and the yeast go dormant and settle to the bottom (provided the total alcohol isn't high enough to kill it). What's left is the flavors of the pineapple, alcohol, some esters and other byproducts of the yeast doing its thing, and no more sugar, so it's not sweet.
