Use skirt steak. Flank steak will do in a pinch, but true fajitas are skirt steak.
Marinade in a mixture of equal parts apple cider vinegar, worsteshire sauce, red wine and olive oil (don't worry about the fat -- only a little remains, and most of the cooks off). Add several dashes of your favorite seasoning -- I prefer Nature's Seasonings -- and throw in a dash or two of Liquid Smoke.
Grill over a medium heat for about five minutes per side. For good measure, saute some onions and bell peppers (and mushrooms if you like). Before you start grilling, put some flour tortillas in aluminum foil and put in your oven or toaster over on about 250 degrees. Serve the meat and veggies together with your tortillas and some pico de gallo and guacamole.

if you're wanting MEXICAN FAJITAS the here's a original recipe
you will need :
*fajita seasoning (you can always find it in the hispanic foods or mexican foods isle in any store)
* fajitas about 2 lbs
*1 1/2 large onions
*1 1/2 green bell pepper
* olive oil ( for the nonfat part)
1st. season the fajita on both sides and cook on a grill like pan or regular one will do like you would a steak in till its tender
2nd. cut into strips thin but not too thin
slice your onion and bell pepper into thin slices
and toss all into the same pan with some ollive oil and saute intill onions are tender (bell pepper doesnt have to be really tender always has a crisp to it
serve with flour tortillas

Prep Time: 30 Minutes
Cook Time: 20 Minutes Ready In: 50 Minutes
Yields: 5 servings
INGREDIENTS:
2 teaspoons olive oil
2 cloves garlic, minced
2 green bell peppers, sliced
2 yellow bell peppers, sliced 1/2 onion, sliced
1 cup mushrooms, sliced
3 green onions, chopped
lemon pepper to taste
DIRECTIONS:
1. In a large frying pan over a medium heat, saute olive oil and garlic. Let the garlic saute for 2 minutes, stir in the green and yellow bell peppers. Let the peppers saute for 2 minutes, stir in the onions. After two minutes add the mushrooms and green onions to the frying pan. Season the vegetables with lemon pepper to taste and stir well. Cover the frying pan and cook until all of the vegetables are tender.

Chicken-Carrot Fajitas:
1 pound boned, skinned chicken breasts
1 teaspoon olive or salad oil
1 cup sliced onion
1 cup shredded carrots
2 teaspoons minced or pressed garlic
1 teaspoon ground cumin
8 warm flour tortillas (10 in.)
Sour cream
Shredded jack cheese
Salsa
Salt and pepper
1. Rinse chicken, pat dry, and cut into 1/2-inch pieces.
2. In a 10- to 12-inch nonstick frying pan over high heat, combine oil, onion, carrots, garlic, and cumin; stir often until onion is lightly browned, about 5 minutes. Pour into a bowl.
3. Add chicken to pan and stir often until no longer pink in center of thickest part (cut to test), about 5 minutes. Pour onion-carrot mixture back into pan and stir until hot, 1 to 2 minutes.
4. Spoon chicken mixture onto tortillas. Add sour cream, cheese, salsa, and salt and pepper to taste. Fold tortillas around filling to eat.
Yield: Makes 4 servings
