If they were Italian, I'd have a billion songs for you, but come to think of it not too many songs about the love of a mother in English!!!
How about Leanne W.'s "i hope you dance". (don't know how to spell her last name)

REcently I watched a son take his mom to the dance floor for his wedding and he dedicated the song to her, it was "You are my Sunshine". It was a real tear jerker. There are alot of different recording artists that do the song and it was really sweet. The mom had sang that to her son every night when he was very little. Anyways, just a thought! Good luck to you!

My brother and mother danced to "Have I Told You Lately That I Love You". I thought that song was perfect, I know Rod Stewart sings it, but I believe some others do as well.

If she has a song that is special for sentimental reasons, then she could use that regardless of the song. Something that has meaning to them will be sweet, no matter what it is.
If she doesn't have anything special, then any mother/so song would be nice, even if it's a more traditional song for when the son is the groom.
Here's some song lists of mother/son songs.

My husband and his mother danced to Ray Charles's "Georgia On My Mind" since her first name is Georgia :-)
