I am looking for a semi-healthy way to use up leftover chili. Any ideas?

Chili is one of those things that gets better after a day. You can try using it as a sauce for pasta or chicken. Or add some cheese and make it into stuffed shells. Or use it as a layer in lasagna or meatloaf. Or chili is just good by it self. You could make it healthier by adding more cooked veggies or firm or semi firm tofu to it. I know tofu doesn't sound good but if it is cut up small, you won't even notice it and then you get the benefits from the soy.

Never really had any chili left over. . .

I do put some in eggs (scrambled) or on hot dogs but neither of those are really healthy.

You can use it for a chip dip if you add some (like lots) of salsa, shredded cheese and sour cream then heat it all up. It is good with tostitos the next day (I usually hold a bit from the pot just for this purpose).

Freeze it in smaller batches to thaw out for a quick supper. You can also turn it into a Taco soup, like this one. Maybe leave out taco seasoning packet...


Taco Soup

1 to1½ lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning

Garnishes (any or all)
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese


Brown ground beef over medium heat in large stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still opaque, stop cooking and drain off any fat. Return to heat and add remaining indredients. Cover and let simmer at least 30 minutes, or up to about 3 hours. (Can be held longer in a slow cooker set on Low.)

Serve in bowls w/ crushed corn chips in the bottom. Top each bowl w/ garnish of choice.

If you are sick of chili at the moment, put it in the freezer and then use it later to top a baked tator, tortilla chips or baked fries! Add a dollop of lowfat sour cream and invite me over for lunch !! : )

well i'll have to said if it is over 2-10 days threw it away or u can make a chili dog or give it to ur dog if u got one

Make a "Messy Potato" cheese, chili and anything else you may want on it. Thy are a great last minute meal.

with leftover chilli you should cook it untill soft then put chopped up chicken in a pan with it and it gives the chicken a nice flavour
