Champagne Punch

2 (46 oz) cans pineapple juice
½ cup lemon juice
¼ cup lime juice
½ cup fresh mint
2 bottles champagne, chilled

Combine pineapple juice, lemon and lime juice, and mint. Bruise the mint to release it’s flavor. Mix well, and store in fridge overnight, stirring if you think about it.

To serve, strain the mint out of the juice. Gently stir in champagne. Garnish with lemon and lime slices or freeze them in an ice ring.

Can be easily halved or doubled.

MARGARITA PUNCH

1 liter of Tequila
1 liter triple Sec
4 quarts sweet & sour mix
1 quart ginger ale
1/2 gallon lime sherbet

Mix the Tequila, Triple Sec, sweet & sour and ginger ale in a punch bowl. Float the lime sherbet on top by large spoonfuls

This will serve a crowd, but you can halve the recipe if you need to.

If you serve in cocktail glasses you can garnish with a wedge of lime for color.

Ya Ya Punch

Watch out, this is one that will sneak up on you.

1 C. Pineapple Juice
1 C. Cranberry Juice (or Cranapple Juice)
1 Jigger Vodka
1 Jigger Peach Snapps
1 Jigger Coconut Rum
Splash of Grenadine

Mix all together in a small pitcher, and pour over ice.

I just saw something not too long ago that was delightful on "take home chef" - I love that guy! He cut the top 1/4 section off of a water melon. Made the base stable by slicing a flat section. He then took a potato masher and mashed the insides straining the juice fromt he watermelon. He replaced the juice inside the watermelon and added orange slices squeezing the orange juice into it. Then he added champane. I'm imagining there are all kinds of things that could be done with this! What about Pama-pomigranite liquer? I'd like to try that for sure! Anyway...he drilled two holes in the top and replaced the lid and inserted two long straws. It just looked delicious!

The best way to make a lot of punch on the cheap is to chop up a lot of fresh fruit into a large basin, bowl or bucket (pineapple, orange, apple, grapes etc.) - if you use tinned fruit then chuck in the juice from the tin too - then add spirits and mixers in the following combination:

2 parts White Rum
3 parts Fruit Juice (I find a mix of orange and apple juice goes down well)
1 part lemonade
1 part creme de cassis or grenadine

The end result is a nice blood-orange coloured refreshing punch that I have found has a fairly universal appeal and gets guests comfortably sozzled for not much investment.

I made this up for a party I hosted and everyone loved it:

Hard Hawaiian Punch
32 oz. Orange Juice
32 oz. Cranberry Juice
32 oz. Pineapple Juice
20 oz. Malibu Rum (coconut rum)
20 oz. Ameretto
10 oz. Southern Comfort
5 oz. Grenadine (cherry syrup)

Mix all ingredients in large punch bowl and enjoy! For a fun effect, float orange slices with cherries on them in the punch.

RASPBERRY CHAMPAGNE PUNCH:
(makes about 3 quarts)
2 (10-ounce) packages frozen red raspberries
in syrup, thawed
1/3 cup Real Lemon - Lemon Juice from concentrate
1/2 cup sugar
1 (750mL) bottle Rose wine, chilled (Gallo is good)
1 quart Raspberry Sherbet
1 (750mL) bottle Asi Spumante or champagne, chilled
In blender container, puree raspberries. In large punch bowl, combine pureed raspberries, Real Lemon Juice, sugar and wine; stir until sugar dissolves. Just before serving, scoop sherbet into punch bowl; add Asti Spumante.
Stir gently. Serve. NOTE: I also add 3/4 quart of Club Soda to this recipe.

SHOWER PUNCH
1 large can Hawaiian Punch (red)
2 bottles Half & Half Soda
1 large can crushed Dole Pineapple
Vodka to taste (about 1/2 quart)
Stir ingredients together in large punch bowl.

Sangria is a great drink for a party!

Half fill a 1 litre jug with ice
Some chopped or sliced oranges, strawberries and apples
A tablespoon of sugar
Half or 3/4 fill the jug with Red Wine
Add a long dash of Orange Juice

1/2 gallon OJ 2cups
oranges & lemons
Mixed all together more, less, or all to taste, keep taste testing put more oj if like or vice versa. Slice oranges and lemons nicely to float in the bowl do not put in until it's almost ready to serve oranges and lemons will turn red after an hour or so.

Juicy Lucy Cocktail - Looks green and tastes of opal fruits!!

1 bottle of vodka
1/2 bottle of Gin
1 bottle of blue Curacao
1 bottle of orange juice
Fill with Sprite (lemonade)

It really is a hit at parties as it doesn't taste alcoholic!!
