IF you are preserving it yourself... the advantages are YOU can decide what goes into YOUR food. You can use your food from your own garden which ends up being less expensive as well.

Disadvantages are IF you do not preserve properly YOU will get sick. Preserving your own food is time consuming. Some people rather just go buy a can of corn than have to can it themselves.

Are you talking about canning and freezing? I always have fresh vegetables from the garden and so therefore do a lot of canning and freezing. The advantage is having great veggies during the winter season and the good feeling of having grown them myself and didn't spend a load at the grocery store. The disadvantage would be that they won't last as long in the freezer and also that one has to be very careful during the process of canning so that the food does not spoil.

Advantages: I grew it myself so I know it's organic and wholesome; I saved a lot of money (some stuff, like blackberries, raspberries and apples, were virtually free); I have peace of mind knowing that my cellar is full of food for the winter.

Disadvantages? Hmmm....I suppose it's a lot of work, but I enjoy it because it gives me such a good feeling.

BTW, I know t here are recommendations or so-called limits on how long food can be stored, but I am still using home-canned veggies from 5 years ago. I've kept meats in my freezer for several years as well, and if they were well wrapped, the only thing that WILL not keep is liver.

Adv: abuncance from one season is preserved to the next season when that food is not in season.

Disadv: some nutrients are almost always lost during any preservation process

The "Canning" of foods started when Napoleon was conquering Europe. His troops could be fed with canned foods and not rely on foraging. You might want to research this a bit more.
