Rum is a good marinade for leg of lamb (as in Sikaandari Raan).

Rum goes well with any dessert based on chocolate, coffee, almonds, mangoes, coconut... in fact with all tropical fruit, as well as dried fruit.
I use it to flavour Pannacotta, instead of vanilla - as well as a dip for my Savoiardi when I make Tiramisu.

But I don't know about savoury side dishes.

Orange juice. Or add all of the other white liquors, buffet style, and with a little sweet and sour, splash of coke makes a Long Island Tea.
