IRISH SCONE

3 c. flour
3/4 c. sugar
1 tsp. salt
3 tsp. baking powder
3/4 c. raisins
1/4 c. melted butter (or butter)
1 egg
1 1/4 c. milk

Mix dry ingredients together with raisins, then add milk and egg, beat lightly until mixed, stir in melted butter. Pour into iron skillet and bake at 300 degrees for 1 hour. Rub top of scone with butter as soon as you take it out of the oven.

1lb Self Raising Flour
pinch salt
half pint milk
2 eggs
2oz sugar
2oz butter

Seive the flour and salt, rub in the butter, stir in the sugar (if you want a sweet scone, leave out for the savoury versions), you should also add any flavours at this stage, see below for some ideas.

Add eggs (can leave these out, the eggs make for a nice rich mixture though), and milk, mix with a blunt knife until you have a soft stick mixture.

Don't aim for a stiff dough, instead look for a soft, almost frothy dough that will just about hold it's shape.

Turn on to a well floured surface, with floured hands, lightly pat to about an inch thick, cut and place on floured baking tray.

Stick in a hot oven (about 220 C) for about 12 mins. To check cooked, lift one scone and tap the bottom, if it sounds hollow it's cooked. You may need to turn the tray half way through cooking if you have a tempremental oven.

This is a really light mixture, these are prize winners!

Don't be tempted to have the mixture too dry, they will be like biscuits.

Try some of the following (and don't be too precise with amounts, just add as much as you like personally).

Cherry and coconut
Cheddar Cheese
Cheese and onion - add a pinch of mustard to the cheesy ones
Sultana and Grated Apple
Sultana and orange (grate in the zest and the juice of the orange).
Blueberry
Cinnamon and Raisin

Enjoy warm with real butter.

Preheat oven to 425 degrees F (220 degrees C) and place rack in middle of oven. Line a cookie sheet with parchment paper. To prevent the bottom of the scones from over browning, place the prepared cookie sheet inside another cookie sheet.

For the Scones: In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. Gently fold in the blueberries. In a small measuring cup combine the cream, beaten egg and vanilla. Add this mixture to the flour mixture and stir just until the dough comes together. Do not over mix the dough or the scones will be tough.

Transfer the dough to a lightly floured surface and knead the dough gently four or five times and then pat the dough into a circle that is about 7 inches (18 cm) round and about 11/2 inches (4 cm) thick. Cut this circle in half, then cut each half into four pie-shaped wedges (triangles). Place the scones on the baking sheet. Brush the tops of the scones with a little cream or milk.

For the Streusel Topping: In a small bowl whisk together the sugar, flour, and cinnamon. With a pastry blender or two knives, cut in the butter until crumbly. Top each scone with a teaspoon or two of the streusel mixture. Cover and refrigerate any leftover streusel mixture.

Bake the scones until nicely browned, about 20 minutes or until a toothpick inserted in the center of a scone comes out clean. Transfer to a wire rack to cool slightly. These are best eaten the day they are made.

Makes 8 scones

Scone Dough:

2 cups (280 grams) all-purpose flour

1/4 cup (50 grams) granulated white sugar

2 teaspoons (10 grams) baking powder

1/8 teaspoon salt

6 tablespoons (85 grams) chilled, unsalted butter, cut into pieces

1 cup (150 grams) fresh blueberries

1 large egg, lightly beaten

1 teaspoon (5 grams) pure vanilla extract

1/2 cup (120 ml) milk or cream

Brushing tops of scones:

Milk or Cream

Streusel Topping:

1/4 cup (55 grams) brown sugar

1/4 cup (35 grams) all purpose flour

1/2 teaspoon ground cinnamon

2 tablespoons (30 grams) chilled unsalted butter, cut into pieces

Get some scone dough from the grocery store.

Roll it out to about a half an inch thick.

Cut into squares.

Lay them out on a baking sheet.

Lightly brush on melted butter.

Sprinkle with a mixture of sugar and cinnamon.

Bake 400 for 20minutes.

Option: Don't sprinkle all of them with the sugar and cinnamon mixture and after they are baked you can use jams or jellies.

-Use a basic scone recipe for plain scones. Add chopped pistacios and walnuts. Dress with a light layer of honey and bake it right in. Top off with powdered sugar.
-Also try a rolled scone with peanutbutter and coconut. Heat the peanutbutter in a sauce pot on low and slowly stir in the coconut. spread on the scone dough and roll. Place in oven, brush after browning with butter and then use powdered sugar.
-These are also great with overnight dough and you can use whatever filling you want! I've made them with jam, walnuts and honey, peanut butter and coconut, mincemeat, and apple pie filling as long as the apples are chopped up fine.

just use a basic scone receipe , but use a good non salted butter, makes them taste better.

nip down to asda buy a scone mix follow instructions and there you have beautiful scone.
