Butter doesn't last long here...because we use it up before even worrying about it being bad! I keep some in the cupboard in a covered dish for easy spreading or anything that calls for softened butter, and the rest is in the fridge.
In fact, I just bought two more pounds of butter sticks this morning!

Butter does not go bad very easily. What will make it taste bad is exposing it to smelly things in the fridge. Butter absorbs flavors just like chocolate does. If you leave it next to fish it will start to have a faint fishy flavor. So try to keep it away from any items that can transfer smells.

Wrap and freeze what you don't use. Thaw it out when ready to use. Use a deep freezer. My great-grandmother still uses butter from 1999 with this method. No one has died from butter poisoning yet.

It stays fresh for ages if you keep it covered, even out the fridge if your kitchens not too hot.

In the refrigerator covered, with out a problem. But, when it goes on sale, I buy extra and put it in the freezer so It will always be there for baking.
