I have a Viking stove... in fact, it's my second one. I admit I like them for their looks, and for the high BTU's on the burners. But there are a lot of drawbacks.

The oven takes a long time to heat. If you don't have sealed burners, the top of the stove is way too difficult to clean thoroughly. And if I need to do a very low simmer, I have to use an added simmer plate between the burner and the bottom of the pan.

Vikings have gotten better over the years, but you have to really want one in order for the disadvantages to be worth putting up with.

For what it's worth, my sister has a Wolf stove and it has the same drawbacks, plus the igniters are unreliable.
