i got some red snapper from the fish mongers expensive as it was it is a rather large and tastey looking fillit. Thinking of using something a bit spicy with this any ideas would be great thanks.

A wonderfully zestful combination of couscous, fresh herbs, spices and pine nuts - delicious served with some roasted vegetables as a vegeterian main course and a fabulous accompaniment to any grilled fish or meat.

2 tablespoons olive oil
1 garlic clove, finely chopped
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
350 ml chicken stock
10 g saffron strands
6 green onions, trimmed and thinly sliced
225 g couscous
1 coarsely grated lemon, juice and zest of
2 red chilies, seeded and very finely chopped
50 g pine nuts, roasted

Grilled Red Snapper

This recipe calls for a whole fish. If you haven't grilled a whole fish yet, it isn't as difficult as it might sound. This is the traditional Mexican method for grilling snapper.
INGREDIENTS:
1 whole red snapper, split and butterflied (about 2 pounds worth)
1/2 cup achiote paste
1/2 cup orange juice
3 tablespoons lemon juice
3 tablespoons lime juice
PREPARATION:
Mix achiote paste (you should be able to find it in a Mexican market) with citrus juices. Cover all surface of the fish. Place in refrigerator and let sit for at least two hours. Light grill and get a medium flame.

Oil grill and place fish skin side down. When fish is about half way done (about 5 minutes) turn and continue cooking another 3 minutes. The fish is done when the juices start boiling. You should be able to lift the central bone out easily when the fish is cooked. Top with heated salsa.

Try this, reducing ingredients if you only bought a small amount. We often eat red or black snapper and often grill it over the barbecue, but that probably won't do where you live.


Spicy Fish

Makes 6 servings

3 garlic cloves, minced, or 3/4 tsp (4 mL) powder

3 small hot chili peppers, seeds removed

1 tbsp (15 mL) brown sugar

3/4 tsp (4 mL) finely grated lime peel

1/4 cup (60 mL) fish sauce (or fish stock cube)

red snapper

1/3 cup (75 mL) sliced spring onion

3/4 cup (175 mL) prepared chicken broth

3 tbsp (45 mL) lime juice

1 tbsp (15 mL) chopped fresh coriander (or fresh parsley), optional

In blender, process garlic, chili peppers, brown sugar, lime zest and fish sauce until smooth. Brush fillets with half of garlic mixture.

Set in large bamboo steamer or on rack over rapidly boiling water in wok or casserole. Sprinkle with spring onion. Cover. Steam for 4 to 8 minutes, until fish flakes easily when tested with fork. Remove to serving plate. Keep warm.

Combine remaining garlic mixture and broth in small saucepan. Bring to a boil on medium. Boil, uncovered for about 5 minutes until sauce is slightly reduced.

Stir in lime juice and coriander. Makes 1/2 cup (125 mL) sauce. Drizzle over fish.
