We had fried fresh fish last night, with hushpuppies, fresh corn on the cob, and french fries.

Tonite it's going to be Frito corn chips covered with homemade chili, sour cream and shredded cheese with a green salad on the side.

Tommorow night it's chicken and dumplins, with purple hull peas, and a peach cobbler.

Meatloaf!Chop up some white onions,and green bell peppers.Add the onions and peppers to meat.Take 2 bread heals tear them up into tiny little pieces. Add the bread to the meat mixture.Next throw in 2 whole eggs,mix everything together real well.I then put in a baking dish.Make sure its all even in the pan.Add a little barbreque sauce on top of meatloaf.Throw it in the oven at 350 for about an hour.I like to have mashed potatoes and a vegies with my meatloaf.

In an electric skillet, I'm going to cooked chicken thighs... then add mushroom soup[use whatever soup you like, once I used potato soup] (can of soup and can of milk whisked together first) and simmer that for about 10 mins... on top/with the chicken (after you drained the chicken grease) then serve it over rice using the soup as gravy over the chicken and the rice. Easy and very tasty. Oh and you can do the same exact recipe with pork chops instead.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

crushed tomatos in can
corn oil

hebs and spices:
cumin
oregnao
chilli powder

salt & pepper


cut veggies into slightly smaller than bite size, cook the onions in a pot so that they are a little soft add peppers and celery and garlic. Add tomaotos bring to boil then add the rest of veggies. Season to taste.

Its very easy and you can add herbs and spices to really change intensity of flavor and you can't mess it up.

Margarita Shrimp

Ingredients :

1/2cuptequila - (125ml)
1/4cupfresh lime juice - (60ml)
6tblfrozen concentrated orange juice - (90ml)
1tblvegetable oil - (15ml)
1 1/2lbpeeled medium shrimp - (750grams)
Soaked bamboo skewers
3xfresh jalapeno, cut into 8 small pieces
1xlarge red bell pepper, cut into 1/2 inch squares
Kosher salt or other coarse salt
Minced fresh cilantro
Lime wedges

Method :

* For marinade, combine tequila, lime juice, orange juice and vegetable oil in a small bowl.
* Place shrimp into a shallow bowl and pour marinade of top. Place in the refrigerator for 30 minutes.
* Preheat grill to a high temperature, 1 or 2 seconds with the hand test. Drain shrimp from marinade and discard the marinade.
* Slide a shrimp onto skewer; add a piece of jalapeno and bell pepper to rest in the curve of the shrimp. Add other shrimp to skewer and again add jalapeno and bell pepper to rest in the curve of the shrimp. Assemble remaining shrimp with the same process and sprinkle them lightly with coarse salt.
* Grill the skewers uncovered over a high heat for 1 1/2 to 2 minutes per side or until shrimp are just opaque with lightly brown edges. The jalapeno and bell peppers should remain a bit crisp.
* To serve, rim margarita glasses with coarse salt and pile skewered shrimp, jalapeno and bell peppers over glasses. Garnish with lemon wedges.
* Serve and enjoy!

make your basic tomato soup recipe at the end add 1 can of white beans
take chicken breast cut in slices ad garlic salt peeper and lemon pam spray a pan and grill/fry serve with rice
chop veggies like carrots onions zucini green beans peas corn whatever you like pam spray a pan put all your veggies in stir them around add 1/4 cop watter let come to steaming boilcover and turn off

get sandwich bread ham salame and cheese butter bottom of a pirex dish add in layers bread ham bread cheese bread salome bread cheese bread ham..... till it´s full beat 2 eggs very well pour over and bake in hot oven till egg is cooked .15/ 20 MINS
