Smoked Turkey Bean Soup

Vegetable oil

CAMPBELL'S condensed Cream of Potato or Cream of Chicken Soup

White cannellini or white kidney beans, drained
450 ml
1cup chopped sauteed eggplant
1/2 cup zuccini
1 soup can
Water 1 soup can
1/4 lb
Smoked turkey breast, cut into 1/2-inch (1 cm) pieces (about 1 cup/250 ml)
115 g

1 tsp
Paprika
5 ml

1 tbsp
Chopped fresh parsley
15 ml

Instructions

1. In 2-quart (2 L) saucepan over medium heat, in hot oil, cook onion and garlic until tender, stirring occasionally.

2. Stir in soup, beans, eggplant, water, zuccini, turkey and paprika. Heat to boiling. Reduce heat to low. Cook 5 minutes. Stir in parsley. Garnish with fresh parsley sprig, if desired.

TIP: You can substitute leftover roast turkey or baked ham for the smoked turkey.

I don't think that would sound good. You can try, but good luck. Eggplant makes a really good lasagne. First you slice it, then dip it in egg and breadcrumbs, then you fry it. Before this, you might want to start your sauce. I cheat, so I recommend Ragu Old worldstyle. You can add cottage cheese to you sauce right before it's almost ready (optional). Get your pan ready and spead a little sauce on the bottom so it won't stick, sprinkle mozzarella cheese, add eggplant, more sauce, the sprinkle more cheese. Make atleast three layers. Make sure you top off with cheese. Good luck and bon apetitte.

Yes. It should be cut up into smaller chunks. Just about any veggie can be used in soups.
