If it is the same as when making whipped cream or meringue, you use your spoon or what ever you are beating the ingredient with, (stick it into the item you are mixing/whipping and pull straight up) it will make a "peak" or what looks like a hill. If that sort of sags, it is a soft peak, if it stands and does not sag and is stiff (also usually has a point on a stiff peak, where as the soft peak doesn't have the sharp point), that is a stiff peak. As for the best liqueur, what is best is each person's own opinion. Some people like one brand/kind and another person will like a different one. On that, I would suggest going with what one you think taste the best to you. Or if you have a favorite restaurant that makes tiramisu, you might ask them what one they use.
