put some pasta on the boil and wait untill it has cooked, drain it, then add tuna and mushroom soup, put into an oven dish and scrunch up ready salted crisps and put them on top, then add cheese and voila, tuna pasta bake in 15 minutes!

Steak Sandwich

1 large strip, round, or shell sirloin steak, weighing between 12 ounces and 1 pound

1/2 t. coarsely ground black pepper

Salt to taste

2-3 T. oil

2 T. chopped onion

4 oz. crimini mushrooms, cleaned and chopped

1/2 t. thyme

1 loaf French or Italian bread, or 1 Vienna loaf

3-4 T. prepared mustard

Trim any excess fat from the steak. Sprinkle both sides with pepper and salt, then brush with a tablespoon of the oil. Heat a cast-iron or nonstick pan and sear the steak about 2 minutes on each side. Remove from the pan. Cook the onion for 2 minutes in the remaining oil, then add the chopped mushrooms, sprinkling them with the thyme and a little salt. Cook, stirring, until they have softened. If the mixture dries out, add a tablespoon or so of water.

Cut a large piece of bread about 1 inch longer than the steak. (If you're using a Vienna loaf, you may not need to cut it at all.) Slice it lengthwise through the middle, leaving an uncut edge as a hinge. Spread both cut sides of the bread liberally with mustard. Now place the steak on the bottom half and scatter the mushroom mixture on top. Fold the top half of the bread down. Wrap the sandwich in two layers of plastic wrap. Take a long piece of string and tie the sandwich up tightly as if it were a parcel, knotting the string in several places. Put the sandwich on a plate and place another plate on top of it. Now weight it down with either cans of food or a bowl filled with water. Leave it for 8 hours or overnight in the refrigerator or other cold place. When you rescue it from the weights, it will be firm and flat. For serving, unwrap it and slice it on the diagonal so you have several strips, each about 3/4 to 1 inch wide. Arrange these on a platter with a bowl of relish or chutney to accompany them

This is great for breakfast if you have overnight company -- much easier to make than it looks, by the way

CHILI RELLENO CASSEROLE

(Note that the chilies used here are the mild green chilies which come in small cans.....not the hot ones)

10 Eggs
1 pint (2 cups) Cottage Cheese
1/2 cup Flour
1 lb Jack Cheese -- Shredded
1 tsp. Baking Powder
1/2 cup (1 stick) Margarine -- melted
1/2 tsp Salt
2 ea: 4-oz cans Diced Green Chilies (use 3 cans if you like the chilies)

1. Beat eggs until light

2. Add flour, baking powder, salt, cottage cheese, shredded cheese & melted margarine.

3. Stir in chilies

4. Pour into 9x13 baking dish

5. Bake at 350 degrees for 40 minutes

6. Cut into squares, about 2” x 2” (or, 3” x 3”)

Here's a recipe! Swiss Cheese and Ham Quiche
INGREDIENTS:
•6 ounces shredded Swiss cheese
•6 ounces diced smoked ham
•ready to roll pastry in a 9” pie dish
•3 large eggs
•1 cup heavy cream
•1/2 cup milk
•1/2 teaspoon salt
•1/4 teaspoon pepper
•dash cayenne pepper
•1/2 teaspoon dry mustard
METHOD:
Sprinkle cheese and ham over bottom of pastry casing. In a mixing bowl, beat remaining ingredients together. Pour over cheese and ham in pie. Bake in preheated 375° oven for 45 minutes, or until a knife inserted in center comes out clean.
Cut in wedges to serve.
Serves 6.

This recipe is one of my favourites.It is called Italian chicken.Slice courgettes into thin slices and tomatoes.Layer the slices onto a god sized sheet of tin foil.Put fresh basil on top of the vegetables.Take your chicken breast and cut three deep slits in it and then slice up some mozzarella cheese and place them in the slits in the chicken.If you wish put salt and pepper on the top,or even some garlic salt,wrap up,put in baking tray and put into the oven for around 45 minutes at 200.and there you have Italian chicken.Oh yeah,don't forget to lightly rub a bit of olive oil onto the tin foil.

GOODIE BARS:
1/4 stick butter - melted
1 cup graham cracker crumbs
1 cup shredded coconut
1 cup chocolate chips
1 cup chopped walnuts
1 can condensed milk
Melt butter and mix with graham cracker crumbs; press into ungreased 9 x 13 inch baking pan. Spread coconut , then chips, then walnuts. Pour condensed milk on top and bake at 350 for 30 minutes. Cool and cut into squares

stuffed peppers. Buy large Jalapenos Remove the seeds through a slit down the side (get all the seeds out if you want mild) stuff with your favorite cheese . Wrap it with a half slice of bacon .Secure with a toothpick and place them on a grill for a few minutes. They are amazing your family and friends will require you to make them at every outing.

Put 2 slices of bread under a grill, lightly brown, spread some margerine and a thin layer of Ketchup, cover with a really strong cheese and melt under the grill, add pepper to taste.

Student simple:-

One packet of super noodles (pre. BBQ beef)
A can of tuna in sunflower oil
Mature cheddar.

Cook noodles, add tuna on top, grate cheese, shove under grill. Mmmm.... memories of my youth.


Grown up simple:-

Fresh salmon fillet
Rocket leaves & mixed lettuce
Sweet potato
Butter
Salt and pepper
Olive oil

Pan fry salmon fillet in a little olive oil, boil sweet potato chunks, decorate plate with lettuce & rocket, mash sweet potato with a little butter, place salmon over lettuce, drizzle some of the fishy oil over the lettuce, dollop of mash on the side, season with salt & pepper.... Mmmm..... Having this tonight I think

Marinate some strips of Chicken breast meat in olive oil, paprika, salt, black pepper and a dash of mixed herbs... toss fry the marinated chicken then serve with toss green salad and boiled potato. Excellent and filling.

Arroz Con Pollo:
1 tlbsp olive oil
1 tsp garlic powder
1 can chicken broth
1 can stewed tomatoes un drained
3/4 c long-grain rice uncooked
1/2 tsp ground turmeric
2 lbs chicken thighs skinned
1 c froozen peas
In 12 by 8 in micro safe dish combine oil and garlic,cover and microwave on high 1 minute;stir broth and tomatoes in and microwave on high for 5 minutes or until bubbling;stir in rice and termic,arrange chicken thighs over rice with thicker portions toward edges fo dish,cover and microwave on high for 8 minutes;remove chicken and stir in peas in to rice mixture and rearrange chicken on rice and microwave on high for 15 minutes or until chicken is no longer pink,rotating dish once during cooking,let stand for 10 minutes after microwaving for 10 minutes and then serve.
