oil a pan. place cut-in-half tomatoes in the pan. lightly salt and pepper the tomatoes. make a mixture of chopped parsley, minced garlic and olive oil. drizzle parsley/garlic/olive oil over tomatoes. bake tomatoes at 425 degrees F for about an hour and 15 minutes. Cool. toast slices of crusty french bread. spread the toasted slices with MASCARPONE cheese and then put the baked tomatoes over the cheese. yummmmmmmmmmy.

Mascarpone is predominately used in desserts. The last time I worked with it, I made a fruit dish with it using pears and figs. Here's what I suggest:
In a mixing bowl, combine the mascarpone cheese with some honey or if you want an "adult" dish, some late harvest wine or icewine. Mix until well combined and then spoon out onto a plate in the center. Cut slices of your favourite fruit (i.e. pear, apple, figs, etc) and arrange around the mound of mascarpone cheese. Enjoy.

You can do a *lot* with it. It's used in both savory and sweet dishes. Epicurious has a good selection of recipes. The nice thing about mascarpone is that it's easy to work with - you can experiment without worrying that it'll collapse or explode or something :)
My personal favorite is mascarpone with proscuitto and marinated artichoke hearts on chewy dark bread. You can also lighten mascarpone with whipped cream and/or pastry cream (store bought if you're not insane enough to try making it from scratch), sweeten it, and serve it with fruit.

its considered a desert cheese -- its used in tiramisu. its really good with fresh berries and chocolate deserts. just about anything you would use whipped cream for is 10 times better with mascarpone. i remember a cheesecake made with mascarpone -- yum! i think it was a timbale (italian for drum) with ricotta and mascarpone -- don't know where you could find the recipe
