I flew with Easy jet in May this year and we were able to book our tickets in January - it wasn't that much cheaper so far in advance though! The optimum time for the 'cheapest' tickets is between 2 months and 2 weeks before you fly, although you do run the risk of not getting a ticket at all that way!!!

Where are you planning on flying to/from? You may find that the full-servce airlines (BA, BMI etc etc) are equally as cheap, if not cheaper. As one of the respondents here pointed out, the Cheap Fares aren't always immediately available from the time the tickets go on sale..
