Its only when we are eating out in a nice cafe or restaurant when this embarasses me. I don't have issues when he puts nuggets and fries in his burgers at macdonalds but when we are having a romantic night out, well, i wish he'd be a bit more mature? Am I being too fussy? Should i lighten up a bit?

I must admit my table manners aren't very good. But if you really want him to try and be more polite while eating then he should at least attempt it for you. I never thought about putting McNuggets in my hamburger at mcdonalds that is a good idea. If he doesn't come around, then tighten up literally so he literally cannot 'come around' and he will soon be hornily practicing better table manners.
