Rosemary Lime Chicken:
4 boneless skinless chicken breast halves
2 TBS canola oil
1/2 c chicken broth
1/4 c lime juice
2 tsp rosemary, crushed
s&p
Flatten chicken and brown in oil. Add remaining ingredients and cook, uncovered 5-7 min or until juices run clear

Salmon Steaks with Cucumber Sauce:
4 salmon steaks (1 inch thick)
2 TBS oil
3/4 c peeled, seeded and chopped cucumber
1/4 c finely chopped celery
2 TBS chopped green onion
2 TBS flour
1 tsp instant chicken bouillon granules
1/8 tsp pepper
1 c half-and-half
1 egg yolk, slightly beaten
Set oven to broil (or 550) and place salmon steaks on broiler pan. s&p. Broil 3-4 inches from heat, 10-15 min, or until fish flakes easily with fork, turning over once.
Meanwhile, heat oil in small saucepan. Add cucumber and celery. Saute until crisp tender. Add onion, saute 30 seconds longer. Stir in flour, bouillon, and pepper. Blend in half and half. Cook stirring constantly, 5-7 min or until thickened and bubbly. Blend small amount of hot mixture into egg yolk. Add back to how mixture. Cook, stirring constantly, 1 min. Serve with Salmon.

Summer Squash Saute:
1 TBS butter
1 small red bell pepper
2 small yellow squash
2 small zucchini
1/2 mediun onion
1 c cherry tomato halves
1 1/2 tsp lemon pepper
1/2 tsp garlic salt
1/4 tsp oregano
In a large skillet, melt butter and saute pepper, squash, zucchini
5 min. Stir in onion, tomato, lemon pepper, garlic salt and oregano. Cover and cook over low heat 5-10 min or until tender.

place in casserole dish and top with 1/2 c cheddar and broil 2 min

Orange Glazed Blueberry Scones:
2 c flour
1/3 c sugar
1 tsp salt
1 tsp baking powder
1/4 c cold butter
1 egg
3/4 c buttermilk
1/2-1 c blueberries
Sift flour, sugar, salt, and baking powder. Place in mixer. Add butter. In another bowl, wisk egg and buttermilk. Pour into flour while mixing. Do not overmix! Mix berries with a little bit of flour and mix into batter. Stir carefully. Drop scoops onto pan, Bake at 400 for 15 min. After cooling, drizzle with orange glaze.
Orange Glaze:
2 c powdered sugar
2 TBS butter
juice from 2 oranges
Mix and heat. Let cool before drizzling over Blueberry scones.

POTATO BAKE
INGREDIENTS
potatoes
bacon
onion
cheese
cream
INSTRUCTIONS
1.peel potatoes and chop thinly into rings, dice bacon and cut the onion up into rings
2.lay down a layer of potaoes spred some onion and bacon over and keep going untill your tray is full
3.put sour cream and chives witch is in a powder form into cream and mix it up well pour over top
4.grate the cheese sprinkle on top untill fully covered
5.put in oven at 200
6.cook untill the potatoes are soft it takes roghly 1 hour good luck its hard to say how much you will need it all depends on how big the baking tray you are using

Cayenne Shrimp Stir Fry Recipe
1 tsp ea. salt and cayenne pepper
3/4 lb medium-sized peeled raw shrimp
1 Tb canola oil
3 large garlic cloves
3/4 c sliced green onion
1-1/2 c snow peas, strings removed
4 cups chopped vegetables, such as red or green pepper, carrots, celery, broccoli
2 Tb chicken or vegetable broth
1 Tb lemon zest
Toss shrimp with salt & cayenne. Heat oil, on high, in non-stick pan. Saute shrimp, stirring often, about 2 minutes. Remove shrimp. In the same pan, saute garlic and green onions for about 1 minute. Add peas, vegetables and chicken broth. Reduce heat to medium and cook for about 3 minutes, until vegetables are crisp-tender. Return shrimp to pan, with lemon zest and cook for 1 more minute. Serve with rice.
