Im on a budget and have to come up with food that is hopefully quick and easy to make but definatly cheap!

Well, I think this question is always hovering in peoples minds. Good food, fast, cheap and always delicious right?
I'm going with grilled cheese. Man, you can't go wrong there. I always make it, and it takes 2 min prep time, and 5 min cooking time. And the best thing, you can eat it on the run if you have to. Just wrap a napkin around it to protect yourself from the grease. Oh! A useful hint while making it: Put ketchup between the cheese and second slice of bread so you don't have to dip it.
Another solution?
Noodles! A little slower than grilled cheese...but still worth it. Though it can be cumbersome if eaten on the run. >.< Ramen, Mr.Noodle, or Tiawanese.
My third choice would have to be curry. One good curry mix can last FOREVER, and when you need a little extra spice- literally add spice! Though it probably takes longer to make, it does have it moments, and it is quite filling and fun to share with a friend. It doesn't always have to be messy either. Try a blend of mixes!

Chicken Pot Pie Filling

When I make chicken pot pie to freeze, I just freeze the filling in a freeze bag. I do not freeze with the crust but make that when I'm ready to bake.

2 cups chicken stock
1 cup peas or peas with pearl onions
2 cups chopped carrots
1 cup chopped celery
6 Tbs butter
6 Tbs flour
1 cup cream (or milk if you'd rather)
2 cups or so cooked chicken, chopped
1/2 tsp dried thyme
1 tsp dried chives
1 tsp dried parsley
salt and pepper to taste

pie crust

Bring the stock to a simmer and add the carrots. Cook for 5 minutes. Add the celery and peas and cook another 3-4 minutes. Drain the vegetables, reserving the broth.

Melt the butter and sprinkle in the flour, using a whisk. Cook over low heat 2-3 minutes, then slowly whisk in the reserved broth, stirring constantly. Raise the heat a bit and bring to a simmer, stirring, and cook 4-5 minutes. Add the cream and cook another 5 minutes to thicken. Stir in the herbs and add the chicken and vegetables and mix.

(You can freeze at this point if you want.) Pour into a 9x13 pan or a large pie pan. Top with a pie crust or biscuits, making sure to leave some vents. Cook at 400 for 25-30 minutes (or slightly less if using biscuits as they cook faster). I usually do this and make a 9x9 pan for dinner that night and freeze the other half of the filling for another night's dinner.


Chicken Quesadillas

You can make this with leftover chicken or canned chicken. The canned chicken makes for a nice quick pantry dinner.

* Diced cooked chicken
* chili powder
* garlic or garlic powder
* leftover broth or water
* flour tortillas
* Cheddar cheese or a Mexican blend
* sour cream
* salsa

In a small pan, mix the cooked chicken with some chili powder and garlic. Optionally, if you have some taco seasoning mix you can use that instead. Add some water or broth, just enough to make everything moist without being too soupy. Bring to a simmer, cover, and let it heat through, stirring now and then. In the meantime, grate some cheese.

You can bake these quesadillas or heat them in a frying pan with a bit of butter on the outside surfaces. If you're going to bake them, preheat the oven to 450. Set the tortillas on a baking pan, spread the chicken mixture across the tortilla and sprinkle with cheese. Top with another tortilla, then bake for 5 minutes or so.

If you don't want to bake, spread one side of the tortilla with butter and lay in a warm frying pan or on a griddle. Spread the chicken mixture over it, sprinkle grated cheese on top, and place another tortilla on top. Spread butter over it as well. Cook a few minutes until the cheese is melted and the outside of the tortilla is a lightly browned. Carefully flip it over and cook the other side.

Cut into wedges and serve with sour cream and salsa on the side. Refried beans make a nice side dish, of course.


Hamburger Stroganoff

1 pound ground beef or turkey
1 tbs. butter or oil
1 onion, chopped
1 clove garlic, minced
1 can cream soup (mushroom or chicken)
1/2 cup water
salt and pepper to taste
1 cup sour cream, optional

Heat the oil or butter and sauté the onion and garlic until soft. Add the meat and brown, then drain of any extra fat.

Add the soup, water, salt and pepper and heat through.

Remove from the heat and stir in the sour cream if you're using it.

Serve over rice or egg noodles.

Hi there! My personal cheap favorites are as follows:

- Canned chili (Stagg is my favorite) and corn chips w/Velveeta
- Corn dogs (with barbecue sauce)
- Chicken Fingers with ranch dressing or honey to dip 'em in
- Grilled ham and cheese sandwiches
- Polska Kielbasa or Smoked Sausage dogs
- Microwave Hamburger Helper (they're new and very easy)

As you can see, I'm a real health food fanatic. :-)

Grilled Cheese and Tomato Soup! My girlfriend and I plan that one out for dinner at least once a week. Also we do Ramen, which is horrible, but it is a good "I got the munchies" food.

Spaghetti is always easy...
chicken ceasar salad
grilled cheese
homeade chicken noodle soup
baked chicken risoto ( I used canned chicken, cream of mushroom soup, and of course rice...maybe top with a little cheese, and very yummy!)

I really like mixing broccoli, carrots, and chicken with an alfredo sauce, and serve over any pasta. very good also.

but you could try kraftfoods.com or foodnetwork.com and they always have good recipes.

Spaghetti and italian sausage with the garlic toast! You can go to Aldi's (if you have any around you) the sauce (wich I dr. up) is a buck and the noodles are a buck and the italian sausage (I like it hot) is like $2.50. Garlic toast is farely cheap or make your own.

mine is like a 'throw together', but i take 2 chix breasts and cut them up. fry in a little olive oil and set aside when done, in the same pan i cut up and onion and garlic, and fry in a little butter and olive oil, then add some small potatoes, cut or quartered, when almost done, toss in th e chicken, a can of corn and a 1/4 cup catsup. sounds gross...but its really yumm-o
