Similar to a normal cake, but made with vegetables. Maybe a Potato or Zucchini cake?

If you know more about baking than me (which is probably likely),
perhaps you can provide a sweetened recipe that I could leave the
sweetener out of without affecting the texture of a the "cake".

Vegetarian Cake

"This super-moist cake is packed with apples, carrots, potatoes, nuts, dried fruit and spices. It's almost a meal in itself! It's best served the day after it's baked."
Original recipe yield: 1 10-inch bundt cake.

INGREDIENTS:
2 cups all-purpose flour
1 tablespoon baking powder
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground allspice
3/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups peeled and shredded apples
1 1/2 cups shredded carrots
1 1/2 cups peeled and shredded potatoes
3/4 cup dried currants
3/4 cup raisins
3/4 cup chopped walnuts
1 tablespoon grated orange zest
3/4 cup butter, softened
1 1/2 cups brown sugar
3 eggs
2 tablespoons light molasses

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch bundt pan.
Onto a sheet of waxed paper, sift flour, baking powder, cinnamon, allspice, baking soda and salt. Set aside. In a medium bowl, stir together apples, carrots, potatoes, currants, raisins, walnuts and orange zest. Set aside.
Place softened butter and brown sugar in a large mixing bowl. Beat at low speed until mixture is light and fluffy. Add eggs one at a time, beating after each addition, and then mix in molasses. Slowly beat until mixture is thoroughly moistened. Gradually stir in fruit mixture and continue to beat at low speed until well blended. Spoon into prepared pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted in center comes out clean and cake pulls away from sides of pan. Cool on a wire rack for 10 minutes, then remove from pan and cool completely.

Here is an unsweetened cake recipe (applesauce, not veggie).

INGREDIENTS:
3 eggs
1/4 cup vegetable oil
1 cup unsweetened applesauce
1 cup frozen apple juice concentrate, thawed
2 1/4 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon ground ginger
1 1/2 cups ground almonds
2 Macintosh apples - peeled, cored and finely chopped
1 (8 ounce) package cream cheese
3 tablespoons unsweetened apple butter
2 tablespoons frozen apple juice concentrate, thawed

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 inch square baking pan.
Beat the eggs until they drop like ribbons from the beaters. Continue beating and add the oil in a thin stream. Beat in the 1 cup applesauce and the 1 cup unsweetened apple juice concentrate.
Beat in the flour gradually until well blended. Add the baking soda, ground ginger, ground almonds and apples, mix to combine.
Pour the batter into the prepared pan and bake at 350 degrees F (175 degrees C) for about 40 minutes or until the cake tests done. Let cake cool on a rack for 15 minutes before turning out of pan. Cool completely before frosting.
Carefully slice the cake in half horizontally with a long serrated knife. Fill and frost with Apple Butter Frosting.
To Make Apple Butter Frosting: Beat the cream cheese until soft and fluffy. Gradually beat in the apple butter and remaining 2 tablespoons apple juice concentrate.

UPSIDE DOWN VEGETABLE CAKE

2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
1 egg, beaten
1 c. milk
4 c. mixed cooked vegetables (peas, carrots, celery, Lima beans)
1/2 c. vegetable stock
2 tbsp. butter

Mix and sift dry ingredients together and cut in shortening. Combine eggs and milk, add to dry ingredients, stirring until mixed. Arrange hot seasoned vegetables into bottom of greased casserole or baking pan, add vegetable stock, dot with butter, cover with first mixture and bake in hot oven at 425 degrees for 20 to 25 minutes. Turn out on hot serving plate with vegetable on top. Serve with tomato or mushroom soup. Serves 6.



"Sugar-Free" Carrot Cake

Ingredients
2 cups whole wheat flour
1 t. baking powder
1 t. baking soda
1/4 t. salt
1 1/4 cups water
1 1/4 cups dates, chopped
1 cup raisins
1 t. cinnamon
1 t. ground ginger
1/2 t. ground cloves
1/2 t. ground nutmeg
1/2 cup carrot, shredded
1/2 cup chopped walnuts
1/3 cup frozen orange juice concentrate, thawed
Directions

1. Lightly oil a 9-inch springform pan and set aside.

2. In a small bowl, sift together the flour, baking powder, baking soda, and salt, and set aside.

3. In a small saucepan, combine the water, dates, raisins, cinnamon, ginger, cloves, and nutmeg.

4. Bring to a boil, reduce heat, and simmer for 5 minutes.

5. In a large bowl, place the shredded carrots, pour the hot liquid mixture over the top, and allow to cool completely.

6. Add the walnuts and orange juice concentrate to the carrot mixture and blend well.

7. Add the dry ingredients to the wet ingredients and stir well to combine.

8. Pour the batter into the prepared springform pan. Bake at 375 degrees for 45 minutes or until an inserted toothpick comes out clean.
