I would prefer one with 16:9 Aspect Ratio but if there isn't any under $1000 oh well. Also I'm not sure how the connections would work with the 360's Component HD AV Cable to a projector. I'm not sure if any projectors support that kind of input.

You may be in luck. Optoma have just introduced a 16:9 projector with 1280x720 resolution and 3000:1 contrast ratio for under $1000 US. It also supports HDMI and component input so should work fine with your Xbox. See a review at the link below.

What type of projector? Front or Rear. This will make a huge difference. Front you better have an extremely dark room I mean almost little to no light. Most under $1000 do not have the lumens capable of being bright enough for even a small amount of light. But you would also need a svga to component which is a cable that exists.
