Tried and True for me is the recipe on the Philly Cream Cheese box for New York Style Cheesecake. To make it the best, use the mixer till it is SUPER creamy soft, no lumps. Use a true spring form pan, and put a roasting pan larger than the springform pan on the shelf below the cake. Fill the roasting pan with boiling water and cook the cake on the rack over the pan. The added moisture will keep your cheesecake from cracking.
I variate the crust, sometimes using chocolate grahams for a crust, or half chocolate and half honey plain. You can have cans of pineapple and cherry fruit fill available for guests to choose what kind of cheesecake they would like, A plain cheesecake turns into a cheesecake buffet with a few fancy bowls of fruit pie filling or fresh strawberries and melted chocolate for drizzling.
* When using this recipe, I have noticed it calls for sour cream in the list of ingredients, but never mentions at what point to add it. If you don't remember the sour cream, you will forget the sour cream, and it makes a HUGE difference.

Just one favorite is tough to pick but would have to go with plain, that way you can dress it up with whatever you want eg. hot fudge, strawberries, blueberries, cherries, caramel topping.....
