CHICKEN PARMESAN

4-6 chicken breasts
Italian dressing for marinating chicken
2 cups bread crumbs
1/2 cup Parmesan
garlic powder
salt and pepper
mozzarella cheese
spaghetti sauce
oil with 3 tbls. butter

Marinate chicken breasts for 1/2 hour in Italian dressing add Parmesan to bread crumbs and garlic powder, salt and pepper to taste. Dip marinated chicken into bread crumb mixture and add enough oil with butter in pan for frying until brown on both sides.
Preheat oven to 375F degree.

After browning, place chicken in shallow baking pan and pour any kind of spaghetti sauce of your liking over chicken. Add enough mozzarella cheese to cover and bake at 350 for 45 minutes.

If you have sauce left over cook linguini noodles, drain add sauce add 3/4 cup mozzarella and Parmesan for a side dish.

Enjoy!!!!

Now are you asking for help with chicken parm prep because it's your 1st time ? Or just a side dish? Chicken...you know about breading and frying, right? Just a hint on the chicken breast...place between some plastic wrap, pound flat with tenderizing mallet (or an empty wine bottle, red works better than white) this tenderizes and allows for more even cooking, and the breast nearly doubles in size, and is more impressive for the final presentation. For a side, angel hair pasta, and since the chicken is a tomato sauce base, make a simple garlic and olive oil sauce...it will be to die for, with some warm Italian bread, to soak up both sauces, Mama Mia !!!

How about something different other than spaghetti sauce?

Garlic Pasta Sauce

4 slices bacon - chopped
3 cloves garlic - minced
1 head roasted garlic
1 1/2 cups white wine
1 1/2 cups heavy cream
2 tomatoes - diced
1 tablespoon fresh basil - diced
1 1/2 cups parmesan cheese - grated

1. Cook bacon over medium heat until crisp. About half way through, add garlic, and roasted garlic.

2. Pour in wine, stir. When mixture returns to a boil add tomatoes, basil, and cream.

3. When hot stir in parmesan cheese until melted. Pour over hot pasta.

definitely spaghetti bedside or under the chicken. Garlic bread and a good salad with italian dressing makes this a great meal.

You're cooking the chicken parma with tom sauce, right? Cook some pasta, I favor rigatoni these days and serve it with the same tom sauce. Brocolini sautéd with garlic, tarragon and olive oil would work nicely too!
Have fun!

Usually, if you have a good helping of spaghetti with it, all you really need is a good garden salad with it.
