Teriyaki Sauce
25 min 5 min prep
4-6 boneless thin pork chops
1 1/2 cloves minced garlic (I use jar type)
4 teaspoons oil
8 tablespoons sherry wine
8 tablespoons soy sauce
4 tablespoons brown sugar
1/4 teaspoon red pepper flakes (like at pizza restaurants)
4 teaspoons cornstarch
4 tablespoons water
Brown pork chops in oil.
In a bowl, combine garlic, sherry wine, soy sauce, brown sugar, and red pepper flakes -- mix well.
Add to pork chops and simmer for 15 minutes.
Remove pork chops.
Mix cornstarch and water.
Mix with the sauce and stir and simmer until thickened.
Serve sauce tossed with mixed stir-fry veggies or over buttered No-Yolk noodles.

Basic Teriyaki Sauce
Yield: 1 Servings
Ingredients
1 c mirin wine
1 c sake
1 c japanese soy sauce
1 c dashi
1 tb sugar
Instructions
WARM THE MIRIN and sake in a saucepan over moderate heat. Remove the
pan from the burner. Carefully, ignite the mixture and shake back and
forth until the flame dies. Return pan to the burner and add the soy
sauce, dashi and sugar; bring to a boil. Cool to room temperature.
Set aside in a saucepan 1/2 cup of the teriyaki sauce. Dip pieces of
meat (chicken, sliced beef, etc.) into remaining sauce to marinate.
Grill meats. Reduce the sauce in the saucepan over high heat into a
thickened glaze. Makes 1 Quart

scrappykins gave you the best & simple recipe, it is also the one that I learned from my Japanese friends when I was living there. I still prepare my homemade teriyaki sauce in authentic style, I would not put fancy thing like pineapple juice or pepper in it. I like the taste I'm familiar with and same as what I've tasted in Japan.
Pineapple is tropical fruit, in the old days, it was very hard to get in Japan, how could they use it as ingredient of their teriyaki sauce? Good Dashi provides the flavour of teriyaki sauce, and preparing teriyaki sauce without using dashi, it would taste just like a man with no soul.

This recipe was passed around at a job one time, so I took a copy.
I have been making this for about 7 years and my family loves it.
You will have to purchase some items, but I cook with it quite often and so I keep it on hand anyway.
1/4 cup dry vermouth - DO NOT buy cheap cooking wine in the market, get a $4.99 bottle of vermouth at the package store.
1/2 Cup Soy Sauce
2 T Dark Brown sugar
2 T vegetable or Canola oil
2 cloves garlic, crushed through a press
1/4 t black pepper
1 t rice vinegar
Use a small pot and combine the vermouth, soy sauce and brown sugar. Bring to a boil and then lower the heat and simmer, stirring till the sugar is dissolved, about 2 minutes. Remove from heat. Stir in the oil, garlic, pepper and vinegar. Transfer the marinade to a large bowl and let it cool.
I like to use Flank Steak, cut in strips crosswise or chicken breast, also cut into strips.
Once the marinade is cool soak the meat in it for several hours, or better yet, overnight. I have soaked the flank in there for 2 days and it just melted in your mouth.
Skewered on the grill is the best way to cook them.
If you are using bamboo skewers, be sure to soak them in water for about an hour before putting them on the grill, it keeps them from burning and provides moisture to the meat. You can find bamboo skewers in most $1 stores

1/2 cup vegetable oil
1/2 teaspoon garlic powder
1 1/2 teaspoons sugar
Mix well, and refrigerate what you do not use.

¼ cup mixture of equal parts brown sugar and white sugar
½ cup soy sauce
¼ cup cider vinegar
1 clove garlic, minced
½ teaspoon ground ginger
¼ teaspoon ground black pepper
Directions:
1.In small saucepan over low heat, combine all ingredients; use a whisk to mix all ingredients thoroughly.
2.Let simmer, stirring frequently, until sauce thickens and bubbles.
This is a good sauce to marinate chicken breast or thighs in.

soy sauce, minced garlic, minced ginger, brown sugar, bring to boil with a little extra water, I thicken with a little cornstarch mixed in with COLD water added to the mix and boiled til it thickens. Not to thick, sweetened to taste, sweeter it is the more it will burn when BBQing.
