It's The Seeds ! the way it's grows , and you can't do anything about it .

Fruit of the genus capsecum all have some amount of capsaicin in them. The amount of capsaicin is measured in Scoville units. This figure is derived from how diluted a pepper needs to be in water before it no longer has any heat.

Scotch bonnets and Habaneros are the hottest chillies with a scoville rating of between 400,000 500,000. Bell peppers are the lowest at somthing like 5000. Jalapenos are around 10,000-15,000 Scoville units.

Most of the heat is in the seeds, but also in the white pith that attaches the seeds to the flesh.

Yes, the first answer is correct. It's capsacin. And these veggies that we call "peppers" are not under the class of Pepper, they belong under the class of "Chile". The only "pepper" is the black and white pepper.

Jalapenos and habaneros and green sweet, bannana, red sweet, etc are all CHILES. not peppers.

capsacin is the active chemical that makes Chiles "HOT". There is also a skin cream that is used to help joints and muscle aches and the active ingredient is capsacin.

So why not make up a batch of Chile stew right now !!! Nice and hot !!

There's this chemical in them called capascin(sp?) which makes them spicy, found with the seeds, and is not evenly divided between pepper plants, which is why some jalapenos hotter than others.

capsicum is the ingredient that makes hot peppers hot.

It is the same thing used to make OC spray.

jalapenos are going to be hot anyways, but it's the seeds that gives it that big kick

the seeds and the membrane when you remove this it makes it not as hot.
