Well, I wish it could be as simple as the rabbi blesses the Kosher Salt, but its not... I work at Empire Kosher, and we make both Kosher and non-Kosher products. To behonest, if we dont have enough Kosher stuff, we just put the Kosher label on it... So really, there might not be any difference

kosher salt is a much more coarse product than table salt. it gets it's name because the coarseness's of the salt helps when using it to "kosher" meat. the salt draws all the blood out.

if you wanted to 'kosher" a chicken for roasting. wash the chicken thoroughly. then take the kosher salt and rub it liberally all over and inside the chicken. put it in a covered dish and put in in a cooler for 24 hours.
take the chicken and rinse all the kosher salt off.
now the chicken is ready to be seasoned and roasted. you won't find any blood spots in the meat.

In addition to being blessed by a Rabbi, Kosher food has to be prepared in the orthodox Jewish way (Many times requiring the preparer to say a blessing while preparing the meal.)
