So the fish were alive before buying them but the fish guy cleaned them for me. I got home and started cutting them in two because they're so big and I SWEAR the tail MOVED!!!!!! I almost had a mini heart attack!!! Why did that happened?

It is just because those fish are so fresh. Some tissues don't die as fast as others and the nerves simply reacted causing movement. Dying is a process, not usually something instantaneous. A "dead" body can sometimes do some surprising things.

I worked many years in a hospital and saw some real, hair raisers. Turning a dead person can sometimes cause a release of air from the lungs that sounds like a sigh, or even a moan. One in a while a body will even sit up. Be glad it was just a little fish floo.

If they were alive recently, it was probably just some residual nerve impulses. Often times, freshly killed animals will move or twitch. They are dead, but the body still reacts to a few leftover electrical impulses. Ever heard the expression "Running around like a chicken with its head cut off"? This is real. Sometimes, a chicken that has been beheaded will still have enough impulses in its body to literally run or flutter about right after being killed, albeit for a short time. Snakes do this as well. Don't be alarmed.

Quick! Find a fish tank or tupper ware and throw it in with some water!!!
Seriously, though, I hope it's dead, because that would be painful. It could be a nervous system spasm of some sort. Fish have a very primitive nervous system, so stuff like that happens.
