Semi sweet chocolate chips and heavy cream will give you a Genoche icing. Melt the chips in the microwave or a double boiler on the stove. If you don't have a double boiler, you can use a heat resistant mixing bowl and a pan that it fits into without touching the bottom and creating a good seal around the lip of the pot.have water in the pot 25 to 30% full. place on medium heat and pour chips into the bowl and stir when they begin to look wet. When the chips are 75 to 80 % melted slowly add the heavy cream. For one bag(12oz) of chips use 1/2 cup of cream stir with a whisk. You are looking for a creamy consistency like hot fudge sauce. It will stiffen as it cools after spreading on your cake or pastry to a consistency of a coated candy bar like a snickers.
